北方地区酱香型白酒酿造区域空气微生物差异解析OA
Analysis of Differences in Airborne Microorganisms in Sauce-Flavor Baijiu Brewing Zones of Northern China
为解析北方地区酱香型白酒酿造过程中不同区域空气微生物差异,以厂区环境(CQ)、酿造车间(CJ)和制曲车间(QF)的空气样本为研究对象,采用高通量测序技术分析细菌和真菌的群落结构,并对微生物进行关联分析.结果表明,3个区域的微生物群落的丰富度、多样性及物种组成存在差异.CQ细菌和真菌的丰富度、多样性指数均最高,其优势菌属为糖多孢菌属(Saccharopolyspora)、Leptodontidium等;QF优势菌属以克罗彭斯特菌属(Kroppenstedtia)、曲霉属(Aspergillus)等发酵功能性微生物为主,CJ优势菌属以拟杆菌属(Bacteroides)、红曲霉属(Monascus)等厌氧菌为主.3个区域共有操作分类单元较少,显示出明显的菌属分布差异.本研究系统解析了北方地区酱香型白酒酿造环境中多区域空气微生物群落结构,可为理解酿造微生态与品质形成的潜在关联提供数据支撑.
To elucidate the differences in airborne microorganisms across different zones during the brewing of sauce-flavor(Jiangxiangxing)Baijiu in northern China,air samples collected from factory surroundings(CQ),brewing workshops(CJ)and Qu-making workshops(QF)were subjected to high-throughput sequencing to characterize bacterial and fungal community structures,followed by microbial correlation analysis.The results revealed significant disparities in richness,diversity and species composition of microbial communities among the three zones.The CQ possessed the highest richness and diversity indices of both bacteria and fungi,dominated by genera including Saccharopolyspora and Leptodontidium.The QF was predominated by fermentation-functional microorganisms such as Kroppenstedtia and Aspergillus,whereas the CJ was mainly colonized by anaerobes,including Bacteroides and Monascus.The three zones shared a limited number of operational taxonomic units(OTUs),demonstrating obvious divergence in genus distribution.This study systematically characterized airborne microbial community structures in multiple brewing environments of northern sauce-flavor Baijiu,providing data support for exploring the potential correlation between brewing microecology and liquor quality formation.
