以不同色度(78.4、113.7、136.7、221.5 EBC)结晶麦芽酿造精酿啤酒,测定发酵体系中酵母活菌数、啤酒理化指标、颜色参数、挥发性风味物质与感官品质,考察麦芽色度对精酿啤酒发酵工艺及品质的影响.结果表明,当结晶麦芽添加量为10%且色度低于136.7 EBC时,对酵母发酵无显著影响;但色度增至221.5 EBC时,酵母发酵力明显下降.添加结晶麦芽对酵母双乙酰还原能力无显著影响(P>0.05).啤酒色度与结晶麦芽色度呈强正相关(r=0.991),色度升高导致啤酒明度(L*)下降,红绿色调(a*)与黄蓝色调(b*)增强.感官评价表明,随着结晶麦芽色度提高,啤酒焙烤香、焦糖味、口感丰富度与甜味提升,苦味与涩味减轻,其中113.7 EBC结晶麦芽所酿啤酒喜好度评分最高.挥发性风味物质分析进一步揭示,结晶麦芽的添加可增加癸酸甲酯、芳樟醇、椰子醛及大马士酮等特征风味物质含量.本研究可为结晶麦芽在精酿啤酒中的科学选用与风味调控提供理论依据.

Craft beer was brewed with crystal malts of different chromaticities(78.4,113.7,136.7,221.5 EBC).The viable yeast in fermentation system and physicochemical indicators,color parameters,volatile flavor compounds,and sensory quality of beer were determined to investigate the effects of malt chromaticity on the fermentation process and quality of craft beer.The results showed that addition of crystal malt 10%with chromaticity lower than 136.7 EBC exerted no significant influence on yeast fermentation.However,the fermenting power of yeast decreased markedly when the chromaticity rose to 221.5 EBC.The addition of crystal malt had no significant effect on the diacetyl reduction capacity of yeast(P>0.05).A strong positive correlation(r=0.991)existed between beer chromaticity and crystal malt chromaticity.The increase in chromaticity reduced the lightness(L*)of beer,while enhancing red-green chromaticity coordinate(a*)and yellow-blue chromaticity coordinate(b*).Sensory evaluation demonstrated that the rise of crystal malt chromaticity improved roasted aroma,caramel flavor,mouthfeel richness,and sweetness of beer,and alleviated bitterness and astringency.The beer brewed with crystal malt of 113.7 EBC obtained the highest sensory preference score.Analysis of volatile flavor compounds further revealed that the addition of crystal malt increased the contents of characteristic flavor substances including methyl decanoate,linalool,γ-nonalactone,and damascenone.This study provided a theoretical basis for rational selection and flavor regulation of crystal malt in craft beer production.
