豌豆品种对中高温大曲品质及浓香型白酒风味的影响机理OA
Mechanism of Pea Variety Affecting the Quality of Medium-High Temperature Daqu and the Flavor of Strong-Flavor Baijiu
对比6种豌豆(白豌豆B和麻豌豆MJ、MJ1、MJ2、MG1、MG2)的理化性质,基于麻豌豆MJ1较高的淀粉质量分数(61.36%)、蛋白质量分数(25.20%)和脂肪质量分数(1.60%),选取麻豌豆MJ1和白豌豆B进行中高温大曲制备,比较其理化性质、微生物组成及所酿造酒体风味物质组成.结果表明,麻豌豆曲糖化力(434.80 U)和发酵力(0.39 U)更优.高通量测序结果表明,白豌豆曲物种丰富度、多样性和均匀度更高,麻豌豆曲优势物种主导性更强(优势度指数是白豌豆曲的1.72~2.71倍).全二维气相色谱-飞行时间质谱分析结果显示,麻豌豆曲酿造酒体风味物质种类比白豌豆曲多160种.关联分析显示,2类大曲在理化性质-微生物-风味物质关联上均存在差异,麻豌豆曲的风味形成更依赖于真菌群落,而白豌豆曲则与细菌关联更为密切.综上,适量添加麻豌豆MJ1可改善中高温大曲品质,在提升酒体风味复杂性与浓郁度方面展现出较大潜力.
The physicochemical properties of six pea varieties,namely white pea(B)and mottled peas(MJ,MJ1,MJ2,MG1,MG2),were compared.In view of the high mass fractions of starch(61.36%),protein(25.20%)and fat(1.60%)in mottled pea MJ1,medium-high temperature Daqu was prepared using the mottled pea MJ1 and white pea B as raw materials,and their physicochemical characteristics,microbial community structures,as well as the compositions of flavor substances in the brewed Baijiu were comparatively investigated.The results revealed that Daqu made from the mottled pea exhibited superior saccharifying power(434.80 U)and fermenting power(0.39 U).High-throughput sequencing analysis demonstrated that the Daqu produced with white pea possessed higher species richness,diversity and evenness,whereas the Daqu produced with mottled pea showed stronger dominance of dominant species,with its dominance index 1.72-2.71 times as high as that of white pea Daqu.The results of comprehensive two-dimensional gas chromatography time-of-flight mass spectrometry(GC×GC-TOFMS)indicated that the Baijiu fermented with mottled pea Daqu contained 160 more types of flavor compounds than that brewed with white pea Daqu.Correlation analysis identified discrepancies in the correlation networks among physicochemical properties,microorganisms and flavor substances between the two types of Daqu.Flavor formation in mottled pea Daqu relied more heavily on fungal communities,while flavor production in white pea Daqu was closely associated with bacterial communities.In conclusion,moderate supplementation of mottled pea MJ1 can improve the quality of medium-high temperature Daqu and present great potential for enhancing the complexity and intensity of liquor flavor.
