为探究'紫秋'葡萄酒发酵过程中理化性质、活性成分和挥发性风味物质的动态变化,以广东韶关葡萄庄园的'紫秋'葡萄为原料,通过常温发酵酿造葡萄酒,对发酵过程中葡萄酒样品的各项理化指标及挥发性风味物质进行检测.结果表明,发酵过程结束时'紫秋'葡萄酒总酚质量浓度为2.81 mg/mL,总黄酮质量浓度为0.75 mg/mL,总原花青素质量浓度为1.13 mg/mL,总花色苷质量浓度为0.25 mg/mL,2,2'-联氮-双(3-乙基苯并噻唑啉-6-磺酸)(2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid),ABTS)阳离子自由基清除率为57.09%,1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除率为65.99%.与发酵第1天相比,总酚、总黄酮、总原花青素、总花色苷的质量浓度、ABTS阳离子自由基清除率均有显著增加(P<0.05).在'紫秋'葡萄酒中共检测到30种挥发性风味物质,其中,2-甲基丁酸丁酯、2-糠酸甲酯、苯乙醛等挥发性风味物质相对含量显著增加(P<0.05).电子舌评价结果表明葡萄酒在发酵过程中苦味显著降低(P<0.05),感官评价结果表明'紫秋'葡萄酒颜色、酒体和香气指标表现良好.研究结果可为广东、湖南地区葡萄酒的新产品开发及品质改良提供理论支持.

To investigate the dynamic variations in physicochemical properties,active components and volatile flavor compounds of'Ziqiu'wine during the fermentation,'Ziqiu'harvested from a vineyard in Shaoguan,Guangdong Province were used as raw materials,and wine was brewed via ambient-temperature fermentation.Various physicochemical indicators and volatile flavor compounds of wine samples collected during the fermentation were determined.The results showed that the contents of total phenolics,total flavonoids,total proanthocyanidins and total anthocyanins in'Ziqiu'wine reached 2.81,0.75,1.13 and 0.25 mg/mL,respectively;the scavenging rates of 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid)(ABTS)cation radicals and 1,1-diphenyl-2-picrylhydrazyl(DPPH)radicals were 57.09%and 65.99%,respectively,at the end of fermentation.Compared with samples collected on the 1st fermentation day,significant increases(P<0.05)were observed in the contents of total phenolics,total flavonoids,total proanthocyanidins,total anthocyanins and ABTS cation radical scavenging rate.A total of 30 kinds of volatile flavor compounds were detected in'Ziqiu'wine,among which the relative contents butyl 2-methylbutanoate,methyl 2-furoate and phenylacetaldehyde increased significantly(P<0.05).Electronic tongue analysis indicated a significant reduction(P<0.05)in bitterness during fermentation,and sensory evaluation showed favorable performance in color,body and aroma indices.These findings provided theoretical support for developing new wine products and improving wine quality in the Guangdong and Hunan regions.
