抹茶添加量对凝固型酸奶品质与发酵微生物的影响OA
Effects of Matcha Addition on Quality and Fermentation Microorganisms of Set Yogurt
将抹茶添加到凝固型酸奶中,探究抹茶添加量对酸奶理化性质、微观结构及微生物生长的影响.结果表明,抹茶添加可明显赋予酸奶绿色色泽,在添加量1.0%~2.0%时pH值轻微上升(4.3~4.5);适量添加抹茶(1.5%~2.0%)可维持较好的持水性(乳清析出率0.8%~1.0%),过量会导致质地粗糙;总酚酸与总黄酮含量随抹茶添加量的增加而升高(总酚酸最高达240 mg/100 g),游离酚酸增幅尤为明显;发酵后,酪蛋白聚集体尺寸随抹茶添加量增加而增大(2.5%时高达91 μm);乳杆菌菌落总数随抹茶添加量增加而增加,链球菌则在抹茶添加量1.5%时达到峰值,菌落总数为(8.9±0.3)×107 CFU/g;形态学及生化鉴定表明,酸奶中优势菌为德氏乳杆菌保加利亚亚种(Lactobacillus delbrueckii subsp.bulgaricus)和嗜热链球菌(Streptococcus thermophilus).因此,添加适量的抹茶(1.5%~2.0%)可平衡酸奶的感官品质与益生菌生长,并有效富集多酚类物质,这为抹茶发酵制品的开发提供了理论依据.
Effect of matcha addition level on physicochemical properties,microstructure,and microbial growth of yogurt was investigated by adding matcha into set yogurt.The results demonstrated that matcha supplementation distinctly endowed yogurt a green color,and slight elevations in pH values(4.3-4.5)were observed at matcha addition levels of 1.0%-2.0%.Moderate matcha supplementation(1.5%-2.0%)maintained favorable water-holding capacity with whey separation rates ranging from 0.8%to 1.0%,whereas excessive matcha resulted in coarse texture.The contents of total phenolic acids and total flavonoids increased with rising matcha addition,with the maximum total phenolic acid content reaching 240 mg/100 g,among which free phenolic acids exhibited a particularly prominent growth amplitude.After fermentation,the particle size of casein aggregates enlarged as matcha addition increased,peaking at 91 μm with a matcha addition 2.5%.The total count of Lactobacillus rose along with higher matcha concentration,while Streptococcus reached the maximum population of(8.9±0.3)×107 CFU/g at the matcha addition 1.5%.Morphological and biochemical identification verified that Lactobacillus delbrueckii subsp.bulgaricus and Streptococcus thermophilus served as the dominant strains in yogurt.Accordingly,moderate matcha supplementation(1.5%-2.0%)can balance the sensory attributes and probiotic proliferation of yogurt while efficiently enriching polyphenols,which provided theoretical support for the development of matcha fermented dairy products.
