固定化发酵技术在食品工业领域演进态势可视化分析OA
Visualized Analysis of the Evolution of Immobilized Fermentation Technology in the Food Industry
为分析固定化发酵技术在食品工业领域的研究现状和演进态势,选取中国知网(China National Knowledge Infrastructure,CNKI)数据库1980-2025年、Web of Science(WOS)核心合集2001-2025年文献开展检索并筛选,应用CiteSpace软件进行发文量、合作网络及关键词共现、聚类、突现及时间线分析,通过对比国内外研究差异,梳理该领域的研究热点、核心研究团队,并指出当前研究存在的不足.结果表明,全球发文量呈倒U形,CNKI与WOS发文峰值分别为83、23篇;国内外核心作者占比分别为2.46%、4.11%,网络密度分别为0.001 8、0.004 8,核心合作团队未形成.国内研究呈单核特征,以固定化、发酵为核心;国外呈多中心耦合格局,研究更系统多元.国内近年来向功能菌株与高值化产物转型,国外则持续深耕酶固定化与精细调控,国内外发展路径差异显著.本文可为我国食品工业领域固定化发酵技术向高效、连续、绿色方向升级提供理论依据与数据支撑.
To explore the research status and evolutionary trend of immobilized fermentation technology in the food industry,literature from China National Knowledge Infrastructure(CNKI;1980-2025)and Web of Science(WOS)Core Collection(2001-2025)were retrieved and screened.CiteSpace software was adopted to conduct bibliometric analyses,including publication output,collaboration network,and keyword co-occurrence,clustering,burst detection,and timeline mapping.By comparing the research differences between domestic and overseas studies,this study aims to identify the research hotspots,core research teams,and existing deficiencies in this field.The results showed that the global publication output in this field followed an inverted U-curve,with a peak of 83 articles in CNKI and 23 in WOS.The proportions of core authors domestically and internationally were only 2.46%and 4.11%,respectively,with network densities of 0.001 8 and 0.004 8,indicating that a concentrated core author group had not been formed.Domestic research showed a single-core characteristic centered on immobilization and fermentation,while international research presented a multi-center coupling pattern with a more systematic and diverse perspective.Domestic research has shifted toward functional strains and high-value products in recent years,whereas international research has continuously focused on enzyme immobilization and precise regulation,showing remarkable disparities in development paths.This paper can provide a theoretical basis and data support for the upgrading of immobilized fermentation technology toward high efficiency,continuity,and green production in China's food industry.
