分别采用半干法和湿热法制备大球盖菇(Stropharia rugosoannulata)多糖(SRP)和蛋白质(SRD)美拉德反应产物,考察反应产物的乳化性、起泡性、吸水性、吸油性和抗氧化活性,并在单因素实验基础上采用响应面法对半干法美拉德反应条件进行优化.结果表明:采用半干法和湿热法制备的美拉德反应产物,其接枝度、褐变度、乳化活性、乳化稳定性、起泡性、吸水性及吸油性均优于SRP和SRD,且半干法反应产物(SRP-SRDD)的上述性能整体优于湿热法反应产物(SRP-SRDW);SRP、SRD、SRP-SRDD、SRP-SRDW对DPPH、ABTS、羟基自由基清除率以及还原力均随质量浓度增加而提高,两种美拉德反应产物对DPPH自由基的清除率高于SRP和SRD,对ABTS自由基的清除率和还原力高于SRD,低于SRP.半干法的最佳反应条件为反应时间60 min、温度59 ℃、SRD和SRP质量比1∶2.15,该条件下接枝度达22.15%.研究结果可为大球盖菇高附加值产品开发提供参考.

Maillard reaction products(MRPs)were prepared from Stropharia rugosoannulata polysaccharides(SRP)and proteins(SRD)using semi-dry and wet-heat methods,respectively.The resultant MRPs were determined for their emulsifying properties,foaming capacity,water holding capacity,oil absorption capacity,and antioxidant activities.Based on single-factor experiments,response surface methodology was used to optimize the reaction conditions for the semi-dry process.The results showed that the degree of grafting,browning index,emulsifying activity,emulsion stability,foaming capacity,water-holding capacity,and oil-holding capacity of the MRPs prepared by both methods were significantly superior to those of SRP and SRD alone.Moreover,the MRPs obtained by the semi-dry method(SRP-SRDD)showed overall better performance than those from the wet-heat method(SRP-SRDW).SRP,SRD,SRP-SRDD,and SRP-SRDW all scavenged DPPH,ABTS,hydroxyl radicals,and showed reducing power in a concentration-dependent manner.Both MRPs showed higher DPPH radical scavenging rates than SRP and SRD,while their ABTS radical scavenging rates and reducing powers exceeded those of SRD but remained lower than those of SRP.The optimal reaction conditions for the semi-dry process were determined as follows:reaction time of 60 min,temperature of 59 ℃,and SRD-to-SRP mass ratio of 1∶2.15.Under these conditions,the degree of grafting reached 22.15%.These findings provide a reference for developing high-value-added products from S.rugosoannulata.
