Research Progress on the Mechanism and Novel Control Technologies for Meat Products Oxidation

肉品氧化控制是保障肉品品质、规避潜在健康风险的关键环节,其核心涉及脂质氧化、蛋白氧化及多因素调控.随着肉品氧化的分子机制、影响因素及调控技术被逐渐解析,肉品氧化控制及其相关技术越来越受到食品科学研究者、肉类生产企业的关注.本文总结肉品氧化机制,比较传统与新型肉品氧化控制技术的应用效果、成本及局限性差异,并对天然抗氧化剂等功能因子及多技术协同策略在抑制肉品品质下降、降低健康风险方面的作用原理与实践效果进行了阐释.此外,基于肉品氧化控制技术对食品安全和品质提升的核心价值探讨了其在肉类加工、贮藏及产业高质量发展方面的现存瓶颈、发展机遇与未来趋势,以期推动肉品氧化控制技术向绿色化、智能化、精准化升级,丰富安全、高品质肉类产品供给,为肉品氧化控制的理论研究深化、技术创新突破及实际生产应用提供坚实的理论依据与科学的实践指导.

The control of meat oxidation,a crucial link in ensuring meat quality and avoiding potential health risks,mainly involves lipid oxidation,protein oxidation,and multi-factor regulation.As the molecular mechanisms and influencing factors of meat oxidation have been gradually elucidated and control technologies have been developed,meat oxidation control and its related technologies have attracted increasing attention from food science researchers and meat production enterprises.This review summarizes the mechanisms of meat oxidation,compares the differences in application effects,costs,and limitations between traditional and novel meat oxidation control technologies,and explains the mechanism of action and practical effects of functional factors such as natural antioxidants and integrated multi-technology strategies in inhibiting the decline of meat quality and reducing health risks.In addition,based on the core value of meat oxidation control technologies in improving meat safety and quality,this paper discusses the existing bottlenecks,development opportunities,and future trends in meat processing,storage,and high-quality industrial development.This review is expected to promote the upgrading of meat oxidation control technologies toward green development,intelligence,and precision,enrich the supply of safe and high-quality meat products,and provide a solid theoretical basis and scientific practical guidance for deepening theoretical research on meat oxidation control,making breakthroughs in technological innovation,and promoting the practical application of new meat oxidation control technologies.
