以山东传统特色肉制品诸城烤鸡背为研究对象,系统比较新卤腌蒸(new-brine steaming,NS)、老卤腌蒸(old-brine steaming,OS)、新卤卤煮(new-brine boiling,NB)与老卤卤煮(old-brine boiling,OB)4 种加工方式对其风味品质的影响.综合运用色泽分析、游离氨基酸测定、气相色谱-离子迁移谱、电子鼻、电子舌及感官评价等多种现代分析技术,深入揭示不同加工工艺对烤鸡背风味物质形成的作用机制.结果表明,卤煮处理(NB与OB组)能显著提升挥发性风味物质(如乙酸乙酯、3-庚酮等)的含量,并有效富集鲜味氨基酸,其中谷氨酸含量在NB组中达到196.22 mg/100 g,使其感官综合评分最高(7.257).相比之下,腌蒸工艺(NS与OS组)因美拉德反应程度较弱及部分氨基酸流失,导致风味协调性较差.尽管OB组样品中苦味氨基酸积累量较高(56.71 mg/100 g),在一定程度上影响其滋味接受度,但其特征香气成分保留能力突出.本研究优化了传统烤鸡背加工工艺,并明确了NB为提升产品整体风味品质的最佳加工方式.

This study investigated the effects of four processing methods,namely new-brine steaming(NS),old-brine steaming(OS),new-brine boiling(NB),and old-brine boiling(OB)on the flavor quality of Zhucheng grilled chicken rack,a traditional meat product from Shandong.By integrating multiple analytical techniques including colorimetry,free amino acid analysis,gas chromatography-ion mobility spectrometry(GC-IMS),electronic nose,electronic tongue,and sensory evaluation,the formation mechanisms of flavor compounds under different processing conditions were thoroughly elucidated.The results demonstrated that the boiling methods(NB and OB)significantly enhanced the content of volatile compounds(such as ethyl acetate and 3-heptanone,etc.)and enriched umami amino acids,with glutamic acid reaching 196.22 mg/100 g in the NB group,which achieved the highest overall sensory score(7.257).In contrast,the steaming methods(NS and OS)resulted in poor flavor balance due to insufficient Maillard reaction and loss of certain amino acids.Although the OB samples accumulated higher levels of bitter amino acids(56.71 mg/100 g),which somewhat reduced taste acceptability,they exhibited higher retention of characteristic aroma compounds.This study provides a theoretical basis for optimizing the processing technology and flavor regulation of traditional grilled chicken rack,confirming that NB is the optimal method for enhancing the overall flavor quality.
