不同熟制方式对鸡肉品质特性的影响OA

Effects of Different Cooking Methods on the Quality Characteristics of Chicken Meat

鸡肉作为重要的肉类消费品,其熟制工艺直接影响产品品质与风味特征.以鸡腿肉为原料,系统比较煮制、蒸制、炸制和炒制4 种常见熟制方式对鸡肉品质的影响,通过感官评价、质构分析、剪切力、水分及蛋白质含量测定等,结合电子鼻和气相色谱-离子迁移谱(gas chromatography-ion mobility spectroscopy,GC-IMS)技术,全面解析不同熟制工艺下鸡肉的理化特性与风味物质变化规律.结果表明,炸制处理鸡肉的感官评分最高,且具有最优的硬度和咀嚼性,分别达到(6 274.17±130.06)g和(2 311.59±526.52)N·mm,显著高于蒸制组的硬度(2 148.01±170.38)g和煮制组的硬度(3 671.25±328.98)g(P<0.05).蛋白质含量与水分含量呈负相关,炒制处理鸡肉的蛋白质含量最高.电子鼻结合GC-IMS可有效区分不同熟制方式,共鉴定出42 种特征挥发性物质,其中煮制处理组挥发性物质种类最多,正戊醛、庚酮等关键风味物质含量显著增加.综上,企业可以依据生产及工艺要求选择适合的预处理熟制方式.

Chicken meat is an important meat product for consumption.Cooking methods directly affects the quality and flavor characteristics of chicken products.In this study,the effects of four common cooking methods:boiling,steaming,frying,and stir frying on the quality of chicken thigh meat were systematically compared.Sensory evaluation,texture analysis,shear force measurement,and determination of moisture and protein contents were performed,along with the use of electronic nose and gas chromatography-ion mobility spectrometry(GC-IMS)to comprehensively analyze the changes in the physicochemical properties and flavor compounds of chicken meat under different cooking methods.The results indicated that fried chicken gained the highest sensory score and exhibited the optimal hardness and chewiness,reaching(6 274.17±130.06)g and(2 311.59±526.52)N·mm,respectively.Its hardness was significantly higher than those of steamed chicken((2 148.01±170.38)g)and boiled chicken((3 671.25±328.98)g).Protein content showed a significant negative correlation with moisture content.The highest protein content was observed in stir-fried chicken.Electronic nose coupled with GC-IMS effectively distinguished between differently cooked chicken samples,identifying a total of 42 characteristic volatile compounds.Boiled chicken had the greatest variety of volatile compounds,with significant increases in the contents of key flavor compounds such as n-pentanal and heptanone.In summary,enterprises can select an appropriate pre-cooking method based on their production and process requirements.
