魔芋胶与卡拉胶复配对无磷鸡肉糜凝胶特性的影响OA
Impact of Konjac Gum-Carrageenan Mixture on the Properties of Phosphorus-Free Chicken Meat Gels
为满足无磷肉制品加工需求,以魔芋胶-卡拉胶复配体系替代三聚磷酸钠(sodium tripolyphosphate,STPP),通过调控复配比例,探究其对鸡肉糜凝胶品质的影响,并揭示其作用机制.采用质构分析、流变学测试、低场核磁共振、傅里叶变换红外光谱及激光共聚焦扫描显微镜(confocal laser scanning microscope,CLSM)等多技术联用,考察复配胶对无磷鸡肉糜凝胶结构及性质的影响规律.结果表明,相比单独使用魔芋胶或卡拉胶,2 种胶体复配使用能够实现STPP的有效替代,质量分数0.4%魔芋胶与0.1%卡拉胶复配显著提升无磷鸡肉糜凝胶性能,质构、保水性、水分分布等指标与STPP组(STPP添加量0.5%)相当.分子结构分析表明,复配胶通过增强疏水相互作用进而改善了无磷鸡肉糜的凝胶特性.CLSM观察证实,复配胶填充肌原纤维间隙,形成更有序、连续的蛋白-多糖网络结构.综上,魔芋胶与卡拉胶复配通过调控蛋白结构、蛋白与多糖分子间相互作用、优化凝胶微观网络结构进而有效改善了无磷鸡肉糜的凝胶品质.
To meet the processing needs of non-phosphorus meat products,konjac gum-carrageenan mixtures at different mass ratio were used as a substitute for sodium tripolyphosphate(STPP),and their effects and mechanisms on the gel quality of chicken surimi was examined.The structure and properties of non-phosphorus chicken surimi gels with konjac gum-carrageenan mixtures were characterized by means of texture profile analysis,rheological test,low-field nuclear magnetic resonance,Fourier transform infrared(FTIR)spectroscopy,and confocal laser scanning microscopy(CLSM).It was found that compared with the use of konjac gum or carrageenan alone,their combination was more effective in replacing STPP in chicken surimi completely.The combination of 0.4%konjac gum and 0.1%carrageenan significantly improved the gel properties of phosphate-free chicken surimi,resulting in texture,water-holding capacity,and water mobility similar to those of the 0.5%STPP group.Molecular structure analysis showed that the gum mixture improved the gel properties of phosphate-free chicken surimi by enhancing the hydrophobic interaction.CLSM results confirmed that the gums filled the gaps between myofibrils,forming a more ordered and continuous protein-polysaccharide network structure.In conclusion,konjac gum-carrageenan mixtures regulate protein structure and protein-polysaccharide interactions,thereby optimizing the microstructure and improving the quality of phosphorus-free chicken surimi gels.
