乳糖作为乳清的主要成分,其晶型、结晶度及颗粒形态等多尺度特征对流动性、加工特性有很大影响.综述系统地总结了以膜分离法和结晶法为代表的从乳清中生产乳糖的技术路线,全面梳理了乳基食品中乳糖含量的检测方法以及结晶乳糖的多尺度表征方法.深入讨论了差示扫描量热法、X 射线衍射法等分析技术在乳糖晶型鉴定、结晶度测量以及结晶行为评估中的应用特点及其相对优势.通过将技术见解与工业应用相结合,文章旨在为乳产品深加工中优化生产过程和提高质量评估标准提供全面参考.
As the main component of whey,lactose exhibits multiscale characteristics—such as crystal form,crystallinity,and particle morphology—that strongly influence its flowability and processing behavior.This review systematically summarized the technical routes for producing lactose from whey,represented by membrane separation and crystallization methods,and comprehensively sorted out the detection methods for lactose content in dairy-based foods and the multi-scale characterization methods of crystalline lactose.The application features and relative advantages of analytical techniques such as differential scanning calorimetry and X-ray diffraction in the identification of lactose crystal forms,measurement of crystallinity,and assessment of crystallization behavior were discussed in depth.By integrating technical insights with industrial applications,this article aims to provide a comprehensive reference for optimizing production processes and improving quality assessment standards in the deep processing of dairy products.
