为研究畜禽骨蛋白水解在多肽螯合钙粉剂制备中的应用效果,以牛骨、鹿骨等畜禽骨为原料,采用两段式酶解工艺对畜禽骨蛋白进行水解处理,提取骨胶原蛋白并制备多肽.在螯合机理支持下,通过多肽酶解液与氯化钙溶液的混合、干燥等步骤,得到多肽螯合钙粉剂.以未应用畜禽骨蛋白水解技术的多肽螯合钙粉剂作为对照,从钙螯合率、吸收率、稳定性和安全性四个维度,评估制备的多肽螯合钙粉剂的性能.结果显示,综合考虑牛骨、鹿骨、鳕鱼骨和金枪鱼骨制备的蛋白水解产物多肽螯合钙粉剂,多肽螯合钙粉剂平均钙螯合率为 61.35%,粒径平均值约为 35.74 nm,热稳定系数平均值约为 0.89,平均重金属含量约为 0.088 mg.多肽螯合钙粉剂对比项的钙螯合率为 34.5%、粒径平均值为 67.34 nm、热稳定系数为 0.79、重金属含量为 0.18 mg.因此,通过畜禽骨蛋白水解,能够有效提升多肽螯合钙粉剂的钙螯合率,提高多肽螯合钙粉剂的吸收性能、稳定性以及安全性,证明畜禽骨蛋白水解在多肽螯合钙粉剂制备中具有良好的应用效果.

This study investigated the application effects of livestock and poultry bone protein hydrolysis in the preparation of polypeptide-chelated calcium powder,livestock and poultry bone such as cattle bone and deer bone were used as raw materials,a two-stage enzymatic hydrolysis process was employed to hydrolyze the bone proteins,extract bone collagen,and prepare peptides.Supported by chelation mechanisms,the peptide enzymatic hydrolysate was mixed with calcium chloride solution and subsequently dried to obtain the polypeptide-chelated calcium powder.The performance of the resulting polypeptide-chelated calcium powder was evaluated against a control group(prepared without bone protein hydrolysis)across four dimensions:calcium chelation rate,absorption rate,stability and safety.Comprehensive analysis of polypeptide-chelated calcium powders derived from cattle bone,deer bone,cod bone,and tuna bone showed that the application of bone protein hydrolysis yielded powders with an average calcium chelation rate of 61.35%,an average particle size of approximately 35.74 nm,an average thermal stability coefficient of 0.89,and an average heavy metal content of about 0.088 mg.In contrast,the control group exhibited a calcium chelation rate of 34.5%,an average particle size of 67.34 nm,a thermal stability coefficient of 0.79,and a heavy metal content of 0.18 mg.Therefore,the application of livestock and poultry bone protein hydrolysis significantly enhanced the calcium chelation rate of polypeptide-chelated calcium powder,while improving its absorption characteristics,stability and safety profile.These findings demonstrated the favorable application potential of bone protein hydrolysis in the preparation of polypeptide-chelated calcium powders.
