为提升猪骨白汤乳液的物理稳定性,研究海藻酸丙二醇酯(propylene glycol alginate,PGA)对其乳化特性的影响.以猪骨清汤和猪油为原料,添加 0.3%~ 0.7%的 PGA 制备 O/W 型乳液,通过粒径分析、LUMiSizer 稳定性图谱、流变学测试、显微观察及加速贮藏试验系统评价乳液稳定性.结果表明,PGA 显著降低乳液粒径,改善分布均匀性,其中 0.7%组 Dv(90)由空白组的 144.43 μm 降至 3.23 μm.LUMiSizer 分析显示,PGA 有效抑制离心诱导的相分离,0.7%组透光率曲线基本重合,稳定性最优.流变学结果表明,PGA赋予乳液假塑性行为,并显著提高表观黏度与储能模量(G′),形成具有弹性的三维网络结构.显微观察证实PGA 使乳滴更细小、分散更均匀.加速贮藏(37℃,35 d)试验表明,0.7%PGA 组未出现分层或沉淀,而空白组 7 d 即发生严重相分离.综上,PGA 可显著增强猪骨白汤乳液的稳定性,其中 0.7%为最佳添加量,本研究为PGA在传统骨汤产品中的稳定化应用提供了理论依据.

In order to improve the physical stability of pork bone white soup emulsions,the effects of propylene glycol alginate(PGA)on their emulsifying properties were investigated.O/W emulsions were prepared using pork bone soup and lard with 0.3%~0.7%PGA.Emulsion stability were systematically evaluated by particle size analysis,LUMiSizer stability profiling,rheological measurements,microscopic observation,and accelerated storage tests.Results showed that PGA significantly reduced droplet size and improved size distribution uniformity;specifically,the Dv(90)of the 0.7%PGA group decreased from 144.43 μm in the control to 3.23 μm.LUMiSizer analysis revealed that PGA effectively inhibited centrifugation-induced phase separation,with nearly overlapping transmission profiles observed for the 0.7%group,indicating optimal stability.Rheological results demonstrated that PGA imparted pseudoplastic behavior to the emulsion and significantly increased apparent viscosity and storage modulus(G′),suggesting the formation of an elastic three-dimensional network structure.Microscopic observation confirmed that PGA produced finer,more uniformly dispersed droplets.In accelerated storage tests(37℃,35 d),the 0.7%PGA emulsion remained homogeneous without phase separation or sedimentation,whereas the control exhibited severe phase separation within 7 d.In conclusion,PGA significantly enhanced the emulsion stability of pork bone white soup,with 0.7%being the optimal concentration.This study provides a theoretical basis for the application of PGA in the stabilization of traditional bone soup products.
