Effect of Pulsed Electric Field Technology on the Quality of Fruit and Vegetable Products
作为一种非热加工技术,脉冲电场(pulsed electric field,PEF)因低温节能、高效杀菌和营养成分溶出率高等优势,逐渐在果蔬加工领域得到广泛的应用与发展.PEF技术通过施加高强度脉冲电场,使果蔬的细胞膜发生不可逆电穿孔,增强了细胞膜通透性,从而实现了营养成分溶出和微生物高效灭活.基于此,本文首先深入阐述了 PEF技术的产生原理、作用机制及影响因素,系统讨论了 PEF技术在维持果蔬感官属性、促进营养成分溶出及提高果蔬安全性方面的具体作用,总结了 PEF技术的现有不足,并展望其未来的发展方向,以期为PEF技术在果蔬加工领域的广泛应用提供参考.
As a non-thermal processing technology,pulsed electric field(PEF)has gradually been widely applied and developed in the field of fruit and vegetable processing due to its advantages of low-temperature energy saving,efficient sterilization,and high solubility of nutritional components.PEF technology achieves the solubility of nutritional components and efficient inactivation of microorganisms by enhancing the permeability of cell membranes through irreversible electroporation caused by the application of high-intensity pulsed electric fields to fruit and vegetable cells.Based on this,this paper first elaborated on the generation principle,mechanism of action,and various factors affecting the processing effectiveness of PEF technology.Subsequently,it systematically discussed the specific roles of PEF technology in maintaining the sensory attributes of fruits and vegetables,promoting the solubility of nutritional components,and enhancing the safety of fruits and vegetables.Finally,it summarized and prospected the existing shortcomings and future development directions of PEF technology,in order to provide a reference for the extensive application of PEF technology in the field of fruit and vegetable processing.
