珍稀食用菌的生物活性及产品开发研究进展OA

Research Progress on the Biological Activities and Product Development of Rare Edible Fungi

珍稀食用菌(如灵芝、大球盖菇、蛹虫草等)富含多糖、萜类化合物、酚类、黄酮类、甾醇、凝集素等多种生物活性成分,不仅在免疫调节、抗氧化、抗炎、抗肿瘤等方面表现出广泛的药用价值,而且在保健食品与功能性食品开发领域也展现出巨大的应用潜力.本文以灵芝、大球盖菇、蛹虫草、金耳、羊肚菌、黑皮鸡枞菌等代表性品种为调查对象,梳理了国内外相关文献,系统综述了珍稀食用菌的功能成分与生物活性,总结了当前研究现状,并探讨了其在保健食品、药品及功能性饲料添加剂开发中的应用前景,旨在推动珍稀食用菌的可持续利用,为后续深入研究及产业化应用提供科学依据与参考.

Rare edible fungi such as(Ganoderma lucidum,Stropharia rugoso-annulata,Cordyceps militaris),are rich in polysaccharides,terpenoids,phenols,flavonoids,sterols,lectins and other bioactive components.They not only show extensive medicinal value in immune regulation,antioxidant,anti-inflammatory,anti-tumor and other aspects,but also show great application potential in the development of health food and functional food.In this paper,the functional components and biological activities of rare edible fungi were systematically reviewed by referring to relevant literatures at home and abroad,taking representative varieties such as G.lucidum,S.rugoso-a nnulata,C.militaris,Tremella aurantialba,Morchella esculenta and Termitomyces albuminosus as objects.The current research status was summarized.On this basis,its application prospects in the development of health food,medicine and functional feed additives were further discussed,aiming to promote the sustainable utilization of rare edible fungi and provide scientific basis and reference for subsequent in-depth research and industrial application.
