黄桃采后易腐烂,为寻找有效的保鲜方法,本研究以'锦绣'黄桃为材料,采前喷施脱氢醋酸钠,在 4℃冷藏及25℃货架贮藏条件下,测定腐烂指数、硬度、色差等指标,结合高通量测序技术,分析其对黄桃果实品质及真菌多样性的影响.结果表明,货架期结束时脱氢醋酸钠处理组较对照组果实的腐烂指数降低了 22.12%,果实硬度提高了18.92%,并且延缓了可滴定酸、可溶性固形物、自由水含量的下降.高通量测序结果表明,脱氢醋酸钠处理降低了冷藏期果皮与果肉中的真菌多样性及丰富度,改变了桃果实果肉与果皮的真菌群落结构,抑制了间座壳属(Diaporthe)、枝孢菌属(Cladosporium)、链格孢属(Alternaria)和镰孢属(Fusarium)等可能致病菌的相对丰度.综上,采前喷施脱氢醋酸钠处理可有效延长'锦绣'黄桃货架期.

Yellow peaches are highly susceptible to postharvest decay.To explore an effective preservation strategy,this study investigated the effects of pre-harvest spraying of sodium dehydroacetate on'Jinxiu'yellow peaches.The decay index,firmness,color difference,and other quality indicators were evaluated under 4℃cold storage and subsequent 25℃shelf-life conditions.Additionally,high-throughput sequencing technology was employed to analyze the treatment's impact on fruit quality and fungal diversity.The results demonstrated that at the end of the shelf-life period,the decay index of the sodium dehydroacetate-treated group decreased by 22.12%compared to the control group,while fruit firmness increased by 18.92%.Furthermore,the treatment effectively delayed the decline in titratable acidity,total soluble solids,and free water content.High-throughput sequencing revealed that sodium dehydroacetate treatment reduced fungal diversity and richness in both the peel and flesh during cold storage.It notably altered the fungal community structure of the fruit and suppressed the relative abundance of potential pathogenic fungi,including Diaporthe,Cladosporium,Alternaria,and Fusarium.In conclusion,the pre-harvest application of sodium dehydroacetate can effectively extend the shelf life of'Jinxiu'yellow peaches.
