11个低氟茶树新品系的黑茶适制性评价研究OA
Evaluation of Dark Tea Processing Suitability in 11 New Low-fluorine Tea Plant Strains
茶树品种是决定茶叶品质的关键因素,不同品种的鲜叶因其形态特征与内含成分的差异分别适宜加工为不同类别的茶叶.为选育适制黑茶的茶树新品种,建立适制性评价指标,对 117 个杂交茶树新品系进行氟含量测定,从中筛选出低氟茶树新品系 11 个.分别测定这 11 个低氟茶树新品系的主要生化成分含量及对所制黑毛茶感官审评,并进行显著差异性和相关性分析,为黑茶适制性茶树品种选育提供支撑.结果表明,所筛选出的 11 个茶树新品系氟含量为41.06~148.70 mg/kg,水浸出物含量为28.78%~35.02%,茶多酚含量为11.93%~15.50%,游离氨基酸含量为3.56%~5.66%,咖啡碱含量为 1.41%~2.65%,儿茶素组分含量为 10.14%~14.25%,纤维素含量为 8.14%~20.26%,木质素含量为19.69%~28.85%.感官审评得分高于对照的有4个品系.综合比较氟含量、生化成分含量和感官审评结果,初步筛选出低氟优质黑茶茶树新品系 2 个.相关性分析表明水浸出物、茶多酚、咖啡碱、儿茶素组分可作为黑茶品种适制性指标,纤维素、木质素所代表的品种嫩度也是筛选黑茶适制品种的主要参考指标.
Tea plant variety is a key factor determining tea quality,as the morphological characteristics and internal components of fresh leaves from different varieties make them suitable for processing into different types of tea.To breed new tea plant varieties suitable for dark tea production and establish suitability evaluation indicators,the fluorine content of 117 hybrid tea plant new strains was measured,from which 11 low-fluorine tea plant new strains were screened.The main biochemical components of these 11 low-fluorine tea plant new strains were determined,and sensory evaluations were conducted on the dark rough tea made from them.Significant difference and correlation analyses were performed to provide support for the selection of tea plant varieties suitable for dark tea processing.The results showed that the fluorine content of the 11 screened tea plant new strains ranged from 41.06 to 148.70 mg/kg,water extract content from 28.78%to 35.02%,tea polyphenol content from 11.93%to 15.50%,free amino acid content from 3.56%to 5.66%,caffeine content from 1.41%to 2.65%,catechin component content from 10.14%to 14.25%,cellulose content from 8.14%to 20.26%,and lignin content from 19.69%to 28.85%.Four strains received higher sensory evaluation scores than the control.Based on comprehensive comparison of fluorine content,biochemical component content,and sensory evaluation results,two low-fluorine high-quality dark tea plant new strains were preliminarily selected.Correlation analysis indicated that water extract,tea polyphenols,caffeine,and catechin components can serve as indicators for dark tea suitability,while the tenderness represented by cellulose and lignin content is also a major reference indicator for screening dark tea-suitable varieties.
