Comparative Analysis of the Main Biochemical Components in Tea Tree Flowers at Different Flowering Stages of Three Tea Varieties
随着茶树花的研究不断推进,茶树花的综合利用不断升级,其中大多数涉及内含成分的提取及保健食品,利用茶树花生产茶、酒及饮料技术与设备等.试验以'福鼎大毫茶''福鼎大白茶''金萱'等3 个茶树品种的花为对象,探讨不同茶树品种不同花期(露白期、破绽期、初展期、全展期)茶花中水浸出物、茶多酚、游离氨基酸、可溶性糖等内含成分差异及含量变化,旨在为茶树花后期的资源开发利用提供参考依据.研究结果显示,露白期茶花水浸出物及游离氨基酸含量以'福鼎大毫茶'最高,茶多酚及可溶性糖含量以'福鼎大白茶'最高;破绽期茶花水浸出物及茶多酚含量以'金萱'最高,游离氨基酸含量以'福鼎大毫茶'最高,可溶性糖含量以'福鼎大白茶'最高;初展期茶花水浸出物及游离氨基酸含量以'福鼎大白茶'最高,茶多酚及可溶性糖含量以'金萱'最高;全展期茶花水浸出物含量以'福鼎大白茶'最高,茶多酚及游离氨基酸含量以'金萱'最高,可溶性糖含量以'福鼎大毫茶'最高.3 个茶树品种茶花随发育程度各主要生化成分变化存在差异.
With many domestic and foreign researchers continuously advancing the research progress of tea tree flowers and developing their utilization value,the comprehensive utilization of tea tree flowers has shown an increasing trend in recent years,most of which involve internal components extraction and health food,as well as the technology and equipment for producing tea,wine,and beverages using tea tree flowers,and so on.This experiment focuses on the flowers of three different tea varieties,namely Fuding Dahaocha,Fuding Dabaicha,and Jinxuan,to explore the differences and changes in the content of water extracts,tea polyphenols,free amino acids,and soluble sugars,and other components in the tea flowers of different tea tree varieties during different flowering periods(exposed white period,burst period,initial extension period,and full extension period).The aim is to provide a reference for the later resource development and utilization of tea flowers.The research results showed that during the exposure period,Fuding Dahaocha has the highest content of water extracts and free amino acids,while Fuding Dabaicha has the highest content of tea polyphenols and soluble sugars;During the flowering period,Jinxuan has the highest content of water extracts and tea polyphenols,Fuding Dahaocha has the highest content of free amino acids,and Fuding Dabaicha had the highest content of soluble sugars;In the initial stage,the content of water extracts and free amino acids was highest in Fuding Dabaicha,while the content of tea polyphenols and soluble sugars was highest in Jinxuan;During the full extension period,the water extract content is highest in Fuding Dabaicha,the tea polyphenols and free amino acid content is highest in Jinxuan,and the soluble sugar content is highest in Fuding Dabaocha.
