为探究同一条件下始熟期前、后对葡萄果实进行UV-B辐射处理的效果,本研究以'玫瑰香'葡萄为试材,于始熟期前10 d(T1)与始熟期后10 d(T2)对果实进行UV-B补光处理.结果表明:两种UV-B处理均有效促进果皮花色苷积累,减缓醛类物质分解,但使果实可滴定酸含量显著升高、固酸比显著下降,大部分单萜类和醇类物质含量显著下降.相比始熟前处理,始熟后UV-B处理对花色苷和香气物质积累影响更为明显,T2组花色苷积累更快,在花后84 d,其总含量分别为CK的2.14倍、T1组的2.08倍;成熟期,T2组单萜类物质含量最低.此外,UV-B处理对花色苷和香气物质不同组分影响不同,T1处理对矢车菊素-3-O-葡萄糖苷积累有利,T2处理促进芍药素-3-O-葡萄糖苷等单体积累优势明显;T1处理使醇类物质下降最多,T2处理则使单萜类物质下降更多.因此,生产中制定以优化果实着色为核心目标的栽培技术时,建议优先使用始熟期后UV-B处理.

To investigate the effects of UV-B radiation treatment on grape berries before and after veraison under the same conditions,this study used'Muscat Hamburg'grapes as experimental material and applied UV-B supplementation treatments 10 days before veraison(T1)and 10 days after veraison(T2).The results showed that both UV-B treatments effectively promoted the accumulation of anthocyanins in the berry peel and slowed the decomposition of aldehydes.However,they significantly increased the titratable acid content of grape berries and remarkably decreased the solid-acid ratio,whereas the contents of most monoterpenes and alcohols were significantly reduced.Compared with the pre-veraison treatment,the post-veraison UV-B treatment exerted a more pronounced effect on the accumulation of anthocyanins and aroma substances.The anthocyanin accumulation in the T2 group was more rapid,with its anthocyanin content reaching 2.14 times that of the CK group and 2.08 times that of the T1 group at 84 days after flowering.At maturity,the T2 group had the lowest monoterpene content.Furthermore,the UV-B treatments differently affected various components of anthocyanins and aroma substances.For instance,T1 treatment facilitated the accumulation of Cyanidin-3-O-glucoside,while the T2 treatment exhibited a prominent advantage in promoting the accumulation of monomers such as Peonidin-3-O-glucoside;treatment T1 resulted in the greatest reduction in alcohols,while treatment T2 led to a more pronounced decrease in monoterpenes.Based on the experimental results,it is recommended to prioritize the application of post-veraison UV-B treatment when formulating cultivation techniques with the core objective of optimizing berry coloration in grape production.
