试验旨在通过胴体品质、肉质感官、理化指标、营养品质和代谢物(风味)指标综合评价生物发酵饲料对黄羽肉鸡肉品质和风味的影响.选取黄羽肉鸡共计10 000只,随机分为 2组,每组5 000只,对照组饲喂基础饲粮,发酵料组用7.5%的生物发酵饲料替代基础饲粮,每组设置8个重复,每个重复625只,试验期90 d.结果表明:①从胴体品质来看,与对照组相比,发酵料组腿肌率极显著提高(P<0.01),腹脂沉积显著降低(P<0.05);②从鸡肉感官及理化指标来看,与对照组相比,发酵料组肉色黄度值极显著下降(P<0.01),亮度值显著提高(P<0.05),蒸煮损失极显著提高(P<0.01);③从营养品质指标来看,与对照组相比,发酵料组粗蛋白含量显著提高(P<0.05);④从风味指标来看,与对照组相比,发酵料组肌肉肌苷酸含量和鲜味氨基酸含量显著提高(P<0.05),必需氨基酸含量显著提高(P<0.05);发酵料组与对照组挥发性风味成分无显著差异(P>0.05).综上所述,7.5%生物发酵饲料替代基础饲粮可以提高黄羽肉鸡胴体品质,改善肌肉风味,但同时也会影响肉色,降低肌肉保水性.

This study comprehensively evaluated the impact of biologically fermented feed on meat quality and flavor in Yellow-feathered broilers,utilizing measurements of carcass characteristics,sensory attri-butes,physicochemical parameters,nutritional composition,and flavor-related metabolites.A total of 10 000 Yellow-feathered broilers were randomly assigned to two dietary treatments,with 5 000 broilers per treatment:a control group fed a basal diet,and a treatment group in which 7.5%of the basal diet was replaced with biologically fermented feed.Each group consisted of 8 replicates of 625 broilers,and the experiment lasted 90 d.The results showed that:① carcass traits were improved in the fermented feed group,with a significantly higher leg muscle yield(P<0.01)and lower abdominal fat deposition(P<0.05)compared to the control.② For sensory and physicochemical meat quality,the fermented feed group had substantially lower yellowness(P<0.01),higher lightness(P<0.05),and greater cooking loss(P<0.01)than the control.③ Nutritional analysis revealed that crude protein content was signifi-cantly elevated in the fermented feed group(P<0.05).④ In terms of flavor,muscle inosinic acid and umami amino acid levels were significantly higher(P<0.05),and essential amino acid content was increased(P<0.05)in the fermented feed group.No significant differences were observed in volatile flavor compounds between the two groups(P>0.05).In sum-mary,substituting 7.5%of the basal diet with biologically fermented feed improved carcass yield and enhanced muscle flavor in Yellow-feathered broilers,though it also negatively influenced meat color and water-holding capacity.
