益生菌调控畜禽肉品质研究进展OA

Research Progress on Modulation of Meat Quality in Livestock and Poultry by Probiotics

畜禽肉品质是决定市场竞争力的关键要素,在饲料禁抗背景下,益生菌作为绿色添加剂备受关注.益生菌不仅可改善畜禽生长性能,还可经"肠-肌轴"参与骨骼肌发育和肉品质的调控,但不同菌株在不同畜种上的作用效果存在差异,相关调控机制尚未完全明了.文章以猪和鸡为对象,从跨物种视角系统综述了益生菌对肉品质的改善效应及其调控机制,并总结了当前研究瓶颈与未来方向,以期为深化"肠-肌轴"理论认知和推进益生菌的合理应用提供参考.

The quality of livestock and poultry meat is a key factor determining market competitiveness.In the context of antibiotic-free feed,probiotics have attracted much attention as green additives.Probiotics can not only improve the growth performance of livestock and poultry but also regulate skeletal muscle devel-opment and meat quality through the"gut-muscle axis".However,the effects of probiotics vary among strains and animal species,and the underlying regulatory mechanisms are not fully understood.In this review,we systematically summarize the beneficial effects and regulatory mechanisms of probiotics on meat quality from a cross-species perspective,focusing on pigs and chickens,and discuss current research bottle-necks and future directions.This review aims to provide a reference for deepening the understand-ing of the"gut-muscle axis"and promoting the rational application of probiotics.
