脂氧合酶基因介导果实香气物质合成与调控的研究进展OA
Research progress on lipoxygenase genes mediating the synthesis and regulation of fruit aroma compounds
脂氧合酶是脂肪酸代谢途径中的关键酶,能够催化不饱和脂肪酸及其相应酯的加氧反应,其主要代谢产物C6、C9 醛类及其对应的醇类构成了果树成熟果实中的主要芳香物质.为了更好地了解脂氧合酶如何调控果实香气的工作模式和机理,对近年来的相关文献报道进行概括总结,主要包括果实香气主要物质成分,果实香气物质的合成途径、脂氧合酶影响香气物质形成的分子机制及其在果实发育过程中的作用等方面,旨在为果树育种和研究果实香气物质生物合成分子机制提供理论依据.
Lipoxygenase(LOX)is a key enzyme in the fatty acid metabolic pathway,which catalyzes the oxygenation of unsaturated fatty acids and their corresponding esters.Its primary metabolites,C6 and C9 aldehydes as well as their matching alcohols,constitute the dominant aromatic compounds in ripe pomaceous fruits.To comprehensively elucidate the functional patterns and molecular mechanisms by which lipoxygenase regulates fruit aroma,this paper systematically reviews recent relevant research literatures.The review covers the major aromatic components of fruit,biosynthetic pathways of fruit aroma compounds,the molecular mechanisms whereby LOX genes govern aroma formation,and the biological functions of LOX during fruit development.It aims to provide theoretical references for fruit tree breeding and mechanistic investigations into the biosynthesis of fruit aroma substances.
