采用D-最优混料设计,研究米糠膳食纤维为主、洋车前子壳粉及低聚果糖不同配比的膳食纤维补充剂对其持水性(water-holding capacity,WHC)、吸水膨胀性(swelling water capacity,SWC)、持油性(oil-holding capacity,OHC)及感官评价的影响.结果表明,米糠膳食纤维补充剂最佳配比为:米糠膳食纤维64.1%、洋车前子壳粉 18.7%、低聚果糖 17.2%.在此条件下补充剂的持水性为12.50±0.12 g·g-1,吸水膨胀性为 14.29±0.34 mL·g-1,持油性为 2.86±0.06 g·g-1,感官评分为 81.0±2.5 分.米糠膳食纤维因其良好的功能特性可广泛应用于膳食补充剂类产品开发,且米糠膳食纤维、洋车前子壳粉与低聚果糖三者之间的交互作用对膳食补充剂的持水性、吸水膨胀性、持油性和感官评分影响显著(P<0.05).通过米糠膳食纤维补充剂的开发,可实现米糠副产物的高值化利用,促进循环经济发展.

A D-optimal mixture design was employed to investigate the effects of different proportions of dietary fiber supplements,with rice bran dietary fiber as the main component,supplemented by psyllium husk powder and fructooligosaccharides,on their water-holding capacity(WHC),swelling water capacity(SWC),oil-holding capacity(OHC),and sensory evaluation.The results showed that the optimal ratio of the rice bran dietary fiber supplement was as follows:rice bran dietary fiber 64.1%,psyllium husk powder 18.7%,and fructooligosaccharides 17.2%.Under this condition,the WHC of the supplement was 12.50±0.12 g·g-1,the SWC was 14.29±0.34 mL·g-1,the OHC was 2.86±0.06 g·g-1,and the sensory score was 81.0±2.5 points.Due to its excellent functional properties,rice bran dietary fiber could be widely applied in the development of dietary supplement products.Moreover,the interaction among rice bran dietary fiber,psyllium husk powder,and fructooligosaccharides had a significant impact(P<0.05)on the WHC,SWC,OHC,and sensory scores.The development of rice bran dietary fiber supplements could realize the high-value utilization of rice bran by-products and promote the development of circular economy.
