杀青工艺对绿茶品质影响机制研究进展OA
Research Progress on the Mechanism of Fixation Affecting Green Tea Quality
杀青是绿茶加工的核心工序,其工艺调控直接关系到成品茶的风味品质.文章围绕杀青工艺及其对绿茶品质影响机制的研究展开综述,在归纳杀青过程中主要化学成分转化规律的基础上,从色泽、滋味、香气3个方面阐述绿茶品质形成机制;进一步比较干热杀青、湿热杀青、新型单一杀青及复合杀青方式的技术特征和品质效应.分析表明,不同杀青方式在保绿、增香、降苦等方面的差异,本质上源于湿热条件、升温速率和传热方式对酶促与非酶促反应的不同调控.文章进一步从产业适配、技术推广、机制阐释、评价标准和智能化加工等方面凝练当前问题与挑战,并指出精准化、智能化和分领域适配是绿茶杀青技术的重要发展方向,为绿茶加工品质调控研究提供思路.
Green tea fixation is the core process in green tea processing,and its technological control directly deter-mines the flavor quality of the final product.This article provided a review of the research progress on the wither-ing process and its impact mechanism on green tea quality.Based on the transformation patterns of key chemical components during fixation,it elucidated the mechanisms underlying green tea quality formation from the perspec-tives of color,taste,and aroma,and further compared the technical characteristics and quality effects of dry heat fix-ation,wet heat fixation,novel single-fixation methods,and composite fixation approaches.The analysis reveals that the differences between fixation methods in preserving green color,enhancing aroma,and reducing bitterness essen-tially stem from the regulation of enzymatic and non-enzymatic reactions by heat and moisture conditions,heating rate,and heat transfer mode.The review further summarized the current problems and challenges in industrial adap-tation,technology scale-up,mechanistic interpretation,evaluation criteria,and intelligent processing.It proposed that precision,intelligent control,and application-specific adaptation represent important directions for green tea fixation technology and provided a basis for quality control research in green tea processing.
