试验旨在探究茴香渣、茴香秸秆、茴香秕壳3种茴香副产物对湖羊生长性能、屠宰性能及肉品质的影响.选取80只2月龄、体重(19.24±1.94)kg的断奶湖羊公羔,随机分为4组,每组4个重复,每个重复5只.对照组饲喂基础饲粮,试验组分别用茴香渣、茴香秸秆和茴香秕壳完全替代基础饲粮中的大麦秸秆.预试期7 d,正式试验期90 d.结果显示,茴香渣组末重、总增重及平均日增重显著高于其他组(P<0.05),料重比显著低于对照组和茴香秸秆组(P<0.05).茴香渣组屠宰率和净肉率最高,但与其他组无显著差异(P>0.05);茴香渣组眼肌面积显著高于其他组(P<0.05),GR值显著低于对照组(P<0.05).茴香渣组肌肉亮度(L*)值、失水率和剪切力最低,显著低于对照组和茴香秸秆组(P<0.05);滴水损失显著低于对照组(P<0.05).茴香渣组必需氨基酸和鲜味氨基酸含量最高,显著高于对照组和茴香秸秆组(P<0.05).研究表明,饲粮中采用茴香渣替代大麦秸秆可以改善湖羊生长性能、屠宰性能及肉品质.

The experiment aimed to investigate the effects of three fennel by-products,namely fennel residue,fennel straw,and fennel husk on the growth performance,slaughter performance,and meat quality of Hu sheep.A total of 80 aged two months weaned male Hu lambs with a body weight of(19.24±1.94)kg were selected and randomly divided into four groups,with four replicates per group and five lambs per replicate.The control group was fed a basal diet,while the experimental groups were fed diets in which barley straw in the basal diet was completely replaced by fennel residue,fennel straw,or fennel husk,respectively.The pre-test period lasted for seven days,and the formal test period lasted for 90 days.The results showed that the final body weight,total weight gain,and average daily gain in the fennel residue group were significantly higher than those of the other groups(P<0.05),and the feed-to-gain ratio was significantly lower than that of the control group and the fennel straw group(P<0.05).The fennel residue group exhibited the highest dressing percentage and net meat percentage,but no significant differences were observed among the groups(P>0.05).The loin eye area in the fennel residue group was significantly higher than that of the other groups(P<0.05),and the GR value was significantly lower than that of the control group(P<0.05).The fennel residue group showed the lowest muscle lightness(L*)value,water loss rate,and shear force,which were significantly lower than those of the control group and the fennel straw group(P<0.05),and its drip loss was significantly lower than that of the control group(P<0.05).The fennel residue group had the highest essential amino acid content and umami amino acid content,which were significantly higher than those of the control group and the fennel straw group(P<0.05).The study shows that replacing barley straw with fennel residue in the diet can improve the growth performance,slaughter performance,and meat quality of Hu sheep.
