盐津水牛公牛和滇东南水牛公牛育肥性能及屠宰性能研究OA
Study on fattening performance and slaughter performance of Yanjin buffalo bulls and Southeast Yunnan buffalo bulls
试验旨在探究不同遗传背景水牛的生长发育、屠宰性能、胴体品质及内脏器官发育差异.选取(33±3)月龄的盐津水牛公牛(YJ组)和滇东南水牛公牛(DDN组)各10头,育肥期每日在自由采食全株青贮玉米基础上补饲3.0 kg/(头·d)精料补充料.预试期10 d,正式试验期90 d.结果显示,YJ组胸宽极显著低于DDN组(P<0.01),腹围显著低于DDN组(P<0.05);YJ组骨重、骨率、背膘厚度和皮厚极显著高于DDN组(P<0.01),头重和尾重显著高于DDN组(P<0.05),而蹄重显著低于DDN组(P<0.05),胴体产肉率和肉骨比极显著低于DDN组(P<0.01).YJ组肺脏和肾脏重量显著高于DDN组(P<0.05),瓣胃和皱胃重量显著低于DDN组(P<0.05);YJ组小肠、十二指肠和空肠重量极显著高于DDN组(P<0.01).研究表明,盐津水牛骨架更大,具有更强的气体交换、代谢废物排泄及体液平衡调节机能,对可溶性营养物质吸收效率优于滇东南水牛,但后者对纤维性饲料利用率更高.
The experiment aimed to investigate the differences in growth and development,slaughter performance,carcass quality,and visceral organ development of buffaloes with different genetic backgrounds.Ten Yanjin buffalo bulls(group YJ)and ten Southeast Yunnan buffalo bulls(group DDN)aged(33±3)months were selected.During the fattening period,each buffalo was supplemented with 3.0 kg/(head·d)of concentrate on the basis of ad libitum whole-plant corn silage.The pre-test period was 10 days,and the formal test period was 90 days.The results showed that the chest width of group YJ was extremely lower than that of group DDN(P<0.01),and the abdominal circumference was significantly lower than that of group DDN(P<0.05).The bone weight,bone percentage,backfat thickness,and skin thickness of group YJ were extremely higher than those of group DDN(P<0.01),the head weight and tail weight were significantly higher than those of group DDN(P<0.05),while the hoof weight was significantly lower than that of group DDN(P<0.05),the carcass meat yield and meat-to-bone ratio were extremely lower than those of group DDN(P<0.01).The lung and kidney weights of group YJ were significantly higher than those of group DDN(P<0.05).The omasum and abomasum weights were significantly lower than those of the DDN group(P<0.05).The small intestine,duodenum,and jejunum weights of group YJ were extremely significantly higher than those of group DDN(P<0.01).The study shows that Yanjin buffaloes have larger skeletons,stronger abilities in gas exchange,metabolic waste excretion,and body fluid balance regulation,and may have better absorption efficiency of soluble nutrients than Southeast Yunnan buffaloes,while the latter has higher utilization efficiency of fibrous feed.
