为提升预制大马哈鱼的风味和品质,采用湿腌工艺处理鱼肉,通过单因素试验筛选醋酸和β-环糊精(β-CD)的最佳质量分数,并在此基础上进行不同质量比的复配试验,通过分析鱼肉的出品率、水分含量、剪切力、水分分布、色差值、电子鼻、三甲胺(TMA)含量、硫代巴比妥酸(TBARS)值和感官评价变化,明确醋酸联合β-CD对预制大马哈鱼鱼肉的协同作用效果.结果表明,醋酸的质量分数为1.5%时,预制大马哈鱼的出品率和水分含量分别为70.2%和61.24%,剪切力和TBARS值最低,仅为2.6 N和0.375 mg/kg,为最佳处理条件;β-CD的质量分数为1.5%时,预制大马哈鱼的出品率、水分含量和剪切力分别为84.69%,73.8%,3.32 N,TBARS值仅为0.52 mg/kg,对鱼肉品质的改善效果最佳;不同质量比的复配腌制液试验中,各处理组之间的剪切力、色差值和TBARS值无显著差异,其中1∶2组出品率较高,为76.4%,水分含量和剪切力分别为73.00%和4.36 N,TMA含量仅为13.1 mg/kg,协同效果最佳.研究为淡水鱼预制加工过程中风味保持与品质提升,提供理论依据与工艺参考.

To enhance the flavor and quality of pre-prepared Oncorhynchus keta(chum salmon),a wet-curing process was employed.Single-factor experiments were conducted to screen the optimal mass fractions of acetic acid and β-cyclodextrin(β-CD),followed by combination experiments at different mass ratios.The synergistic effects of acetic acid combined with β-CD on pre-prepared chum salmon were evaluated by analyzing changes in yield,moisture content,shear force,water distribution,color difference,electronic nose responses,trimethylamine(TMA)content,thiobarbituric acid reactive substances(TBARS)value,and sensory scores.The results showed that at an acetic acid mass fraction of 1.5%,the yield and moisture content of the pre-prepared chum salmon reached 70.2%and 61.24%,respectively,with the lowest shear force(2.6 N)and TBARS value(0.375 mg/kg),indicating the optimal treatment condition.At a β-CD mass fraction of 1.5%,the yield,moisture content,and shear force were 84.69%,73.8%,and 3.32 N,respectively,with a TBARS value of only 0.52 mg/kg,demonstrating the best improvement in fish quality.For the combination treatments at different mass ratios,no significant differences were observed in shear force,color,or TBARS values among the groups.The 1∶2 ratio group exhibited a higher yield(76.4%),with moisture content and shear force of 73.00%and 4.36 N,respectively,and a TMA content of only 13.1 mg/kg,indicating the optimal synergistic effect.This study provides a theoretical basis and technical reference for flavor preservation and quality improvement during the processing of freshwater fish products.
