针对冷水鱼储运过程中,缺乏新鲜度可视化监测手段的问题,制备蓝莓花青素-大豆分离蛋白(SPI)pH响应指示膜.以SPI为成膜基质,分别添加占SPI干质量0,2%,4%,6%,8%,10%的蓝莓花青素,采用流延法制膜;测定指示膜的力学性能、微观结构、透光率及pH响应色差值;分析花青素溶液在pH值2~13条件下的颜色变化与紫外-可见吸收光谱;将指示膜贴附于三文鱼表面,于35℃条件下贮藏12 h,监测鱼肉pH值与膜颜色的变化.结果表明,花青素质量分数为8%时,膜的性能最佳,抗拉强度由空白膜(0%添加)的17.67 MPa升至23.71 MPa,断裂伸长率达45.80%,表面平整、断面致密;在pH值2~13范围内,花青素溶液由红色渐变为黄褐色,最大吸收波长从512 nm红移至590 nm,各pH值下的色差值均大于5,颜色差异肉眼可辨;三文鱼贮藏过程中,指示膜颜色呈"深紫红→紫红→红棕→深棕"变化规律,与鱼肉pH值先降后升的腐败进程良好对应.研究可为冷链运输中的冷水鱼品质监测提供直观便捷的新手段.

To address the lack of visual freshness monitoring methods for cold-water fish during storage and transportation,a blueberry anthocyanin-soy protein isolate(SPI)pH-responsive indicator film was developed.Using SPI as the film-forming matrix,blueberry anthocyanins at mass fractions of 0,2%,4%,6%,8%,and 10%relative to SPI dry mass were incorporated,and the films were prepared by solution casting.The mechanical properties,microstructure,light transmittance,and pH-responsive color difference values of the indicator films were characterized.The color changes and UV-Vis absorption spectra of anthocyanin solutions were analyzed over a pH range of 2-13.The indicator films were attached to the surface of salmon and stored at 35℃for 12 h to monitor changes in fish pH and film color.The results showed that the film with 8%anthocyanin content exhibited the best overall performance,with tensile strength increasing from 17.67 MPa(0%addition)to 23.71 MPa,elongation at break reaching 45.80%,and a smooth surface with a dense cross-sectional structure.In the pH range of 2-13,the anthocyanin solution gradually changed from red to yellowish-brown,with the maximum absorption wavelength red-shifting from 512 nm to 590 nm.The color difference values at all tested pH levels exceeded 5,indicating visually distinguishable color changes.During salmon storage,the indicator film exhibited a color transition pattern of"deep purple-red→purple-red→reddish-brown→dark brown",which corresponded well to the pH evolution of the fish flesh(initially decreasing and then increasing during spoilage).This study provides an intuitive and convenient new approach for quality monitoring of cold-water fish in cold-chain transportation.
