Contamination status and risk assessment of harmful elements in cultivated edible fungi

为评估栽培食用菌中有害元素的健康风险,在北方某地区采集2022-2025年连续4年的食用菌样品,基于对样本中的Pb,Cd,Hg,As,Cr,Al,Tl,Ba共8种有害元素含量进行统计分析,采用污染指数法评估食用菌有害元素污染等级,并采用每日估计摄入量(EDI)、靶标危害系数法和致癌风险系数法,分别开展人体耐受力评估、非致癌健康风险评估和致癌健康风险评估.结果表明,新鲜食用菌Cd,Cr超标率分别为0.4%,0.9%;干食用菌Cr元素超标率3.7%.除新鲜草菇综合污染指数(PM=0.703 7)为警戒级别外,其他食用菌均为安全级别.新鲜食用菌需要重点监测Cd,As;干食用菌需重点监测Cr,Hg.成人、儿童通过新鲜食用菌或干食用菌摄入有害元素的EDI值均小于相应元素的暂定每日可耐受摄入量值.各食用菌的靶标危害系数均小于1,食用菌中有害元素对成人、儿童的非致癌健康风险均较低.新鲜草菇和香菇中有害元素对成人的致癌风险不可接受(综合致癌风险系数φTCR>10-4),新鲜草菇、香菇、大球盖菇和羊肚菌中有害元素对儿童的致癌风险不可接受(φTCR>10-4),主要源于食用菌中的Cd;干食用菌的致癌风险可接受(10-6≤φTCR<10-4).研究为防范食用菌长期膳食暴露带来的潜在健康风险及其全链条质量安全监控提供参考.

To assess the health risks associated with harmful elements in cultivated edible fungi,fungi samples were collected over four consecutive years(2022-2025)from a region in northern China.Based on statistical analysis of the concentrations of eight harmful elements,namely Pb,Cd,Hg,As,Cr,Al,Tl and Ba,the contamination levels of these elements in edible fungi were evaluated using the pollution index method.Furthermore,human tolerance assessment,non-carcinogenic health risk assessment,and carcinogenic health risk assessment were conducted using the estimated daily intake(EDI),target hazard quotient(THQ),and carcinogenic risk(CR)methods,respectively.The results showed that the exceedance rates of Cd and Cr in fresh fungi were 0.4%and 0.9%,respectively,while that of Cr in dried fungi was 3.7%.With the exception of fresh Volvariella volvacea,which exhibited a comprehensive pollution index PM of 0.703 7(warning level),all other fungi samples were classified as safe.Cd and As in fresh fungi,and Cr and Hg in dried fungi,were identified as elements requiring priority monitoring.The EDI values of harmful elements for both adults and children via consumption of fresh or dried fungi were all below the corresponding provisional tolerable daily intake(PTDI)values.The target hazard quotients(THQs)for all fungi were less than 1,indicating that the non-carcinogenic health risks posed by harmful elements in edible fungi to both adults and children were relatively low.However,the carcinogenic risks from harmful elements in fresh V.volvacea and Lentinula edodes were unacceptable for adults(comprehensive carcinogenic risk index φTCR>10-4),and those in fresh V.volvacea,L.edodes,Stropharia rugosoannulata,and Morchella spp.were unacceptable for children(φTCR>10-4),with Cd being the primary contributor.For dried fungi,the carcinogenic risks were acceptable(10-6≤φTCR<10-4).T his study provides a reference for mitigating the potential health risks associated with long-term dietary exposure to edible fungi and for ensuring quality and safety control throughout the entire supply chain.
