Food contamination has posed significant threats to human health and the global economy,necessitating the urgent development and widespread adoption of rapid,sensitive,specific,and cost-effective detection methods.Protein probes,owing to their exceptional specificity and affinity,have emerged as ideal tools for the detection of food contaminants.This paper systematically reviews the recent research progress of protein probes for detecting food contaminants,provides a comprehensive analysis of their technical advantages and limitations,discusses their significance in food contaminant detection,and outlines future development directions in the field of food safety.This review aims to offer novel insights and a scientific basis for researchers and regulatory agencies in food safety monitoring.
