本试验以麦洼牦牛为研究对象,探讨了饥饿状态下牦牛肌内脂肪含量及脂肪分解代谢产物、激素、酶的变化.选择8头健康无病、生长发育良好、体重相近(110.3±5.85kg)的3周岁麦洼牦牛,采用配对设计将体重临近的麦洼牦牛两两配对,分别将每个对子中的两头牛随机分到试验组和对照组中,每组4头.对照组于试验第1天进行屠宰采样,试验组牦牛做饥饿处理,分别在第1、3、5、7、9天通过颈静脉采血,离心制取血清,并于第9天采血后进行屠宰采样.结果表明,饥饿导致牦牛的活体重量和胴体重量显著降低(P<0.05).饥饿后牦牛股二头肌和半腱肌肌内脂肪含量极显著降低(P<0.01),而腰大肌、背最长肌、腱子肉肌内脂肪含量变化不显著(P>0.05).短期饥饿导致牦牛的血糖浓度显著降低(P<0.05),随着饥饿时间的延长,牦牛血糖浓度变化不显著(P>0.05).牦牛血清中甘油三酯和非酯化脂肪酸随饥饿时间的延长均显著升高(P<0.05),而后血清中脂肪代谢的中间产物β-羟丁酸、乙酰乙酸、草酰乙酸则显著降低(P<0.05).血清中胰高血糖素、去甲肾上腺素随饥饿时间的延长显著升高(P<0.05),而胰岛素显著降低(P<0.05).饥饿牦牛血清中的脂肪分解酶——激素敏感酯酶、脂肪甘油三酯脂酶均显著升高(P<0.05),并于饥饿第3天达到最高水平.以上结果表明,饥饿降低了牦牛的活体重量和胴体重量,并根据血糖浓度调节激素的分泌,提高脂肪分解关键酶的浓度,促进牦牛肌内脂肪的分解,降低肌内脂肪含量,但饥饿后牦牛不同部位骨骼肌肌内脂肪含量的变化存在较大的空间差异.

The Maiwa yak were used in this study to explore the changes in intramuscular fat content,lipolysis metabolites,hormones,and enzymes in yaks under starvation conditions.Eight healthy,well-developed,three-year-old Maiwa yaks with similar body weights(110.3±5.85 kg)were selected.A paired design was employed,where yaks with adjacent weights were paired,and one yak from each pair was randomly assigned to either the experimental or control group,with four yaks per group.The control group was slaughtered and sampled on day 1 of the trial.The experimental group underwent starvation treatment,with blood collected from the jugular vein on days 1,3,5,7,and 9.Serum was separated by centrifugation,and the yaks were slaughtered and sampled after blood collection on day 9.The results showed that starvation led to a significant reduction in live weight and carcass weight(P<0.05).After starvation,the intramuscular fat content in the biceps femoris and semitendinosus decreased extremely significantly(P<0.01),while no significant changes were observed in the psoas major,longissimus dorsi,or shank meat(P>0.05).Short-term starvation caused a significant decrease in blood glucose concentration(P<0.05),but as starvation duration extended,the change in blood glucose concentration was not significant(P>0.05).Serum triglycerides and non-esterified fatty acids increased significantly with prolonged starvation(P<0.05),whereas the intermediate products of fat metabolism—β-hydroxybutyrate,acetoacetate,and oxaloacetate—decreased significantly(P<0.05).Serum glucagon and norepinephrine levels increased significantly with prolonged starvation(P<0.05),while insulin decreased significantly(P<0.05).The key lipolytic enzymes in the serum of starved yaks,hormone-sensitive lipase and adipose triglyceride lipase,increased significantly(P<0.05)and peaked on the third day of starvation.These results indicate that starvation reduces the live weight and carcass weight of yaks,regulates hormone secretion in response to blood glucose concentration,increases the levels of key lipolytic enzymes,promotes the breakdown of intramuscular fat,and reduces intramuscular fat content.Additionally,the mobilization of skeletal muscle fat in yaks exhibits spatial heterogeneity.
