为探究过渡金属取代Dawson型磷钼酸对南美白对虾的冷藏保鲜效果,以5 mmol/L钴取代磷钼酸(P2Mo17Co)和锌取代磷钼酸(P2Mo17Zn)为处理剂,设置空白对照,通过感官评价、黑变评分、色差(ΔE)、pH、汁液流失率、挥发性盐基氮(TVB-N)及菌落总数(TVC)等指标,分析4℃冷藏条件下南美白对虾的品质变化.结果显示:2种处理剂虽会使南美白对虾第10天的汁液流失率略高于对照组,但均可显著延缓南美白对虾品质劣变;第6天时,P2Mo17Co和P2Mo17Zn处理组感官评分分别达6.56、6.58分,显著高于对照组的4.28分;第10天时,2组ΔE值、黑变评分、pH上升幅度、TVB-N值及TVC均显著低于对照组,其中,TVB-N较对照组降低31.2%~38.8%,TVC降低17.6%~23.4%.综合而言,P2Mo17Co与P2Mo17Zn可使冷藏南美白对虾货架期延长2~6 d,且P2Mo17Co在抑制TVB-N积累与微生物增殖方面表现更优.本研究证实了过渡金属取代Dawson型磷钼酸的水产品保鲜潜力.

To investigate the preservative effects of transition metal-substituted Dawson-type phosphomolybdic acid on Litopenaeus vannamei(Pacific white shrimp)under refrigerated storage at 4℃,5 mmol/L cobalt-substituted phos-phomolybdic acid(P2Mo17Co)and zinc-substituted phosphomolybdic acid(P2Mo17Zn)were used as treatment agents,with a blank control group established.The quality changes of the shrimp under refrigerated storage at 4℃were ana-lyzed through indicators including sensory evaluation,melanosis score,total colour difference(ΔE),drip loss rate,total volatile basic nitrogen(TVB-N)value,and total viable count(TVC).The results showed that although both treatment agents caused a slightly higher drip loss rate than the control group on day 10,they significantly delayed the quality de-terioration of shrimp.On day 6,the sensory scores of the P2Mo17Co and P2Mo17Zn treatment groups reached 6.56 and 6.58 points,respectively,significantly higher than the 4.28 points of the control group.On day 10,the ΔE value,melano-sis score,pH increase,TVB-N value,and TVC of both treatment groups were significantly lower than those of the control group.Specifically,TVB-N was reduced by 31.2%-38.8%and TVC was reduced by 17.6%-23.4%compared with the control group.Overall,P2Mo17Co and P2Mo17Zn could extend the shelf life of refrigerated L.vannamei by 2-6 days,with P2Mo17Co showing superior performance in inhibiting TVB-N accumulation and microbial proliferation.This study con-firmed the potential of transition metal-substituted Dawson-type phosphomolybdic acid for aquatic products preservation.
