Correlation between Physicochemical Quality and Taste Palatability of 63 Indica Rice Varieties
为探究63份籼稻理化指标以及口感之间的相关关系,测定了 63份籼稻材料的品质指标、食味品鉴值及食味值,并依据直链淀粉含量和食味值进行等级分类.按直链淀粉含量分为高含量型和中含量型2类,无低含量型材料;在高含量型材料中,水分与淀粉含量呈显著正相关,水分和蛋白质含量呈极显著负相关,蛋白质与淀粉含量呈显著负相关;而在中含量型材料中,水分与蛋白质、脂肪、淀粉和支链淀粉呈极显著负相关.高含量型稻米的食味值与淀粉含量呈显著正相关,而中含量型稻米的食味值与脂肪和蛋白质含量呈极显著负相关.在食味等级分类中,仅4级材料的食味值与理化性质存在显著相关关系.高含量型和中含量型籼稻的理化性质、食味值间相关关系不完全一致,且食味值测量数据与食味品鉴结果有差异.
To investigate the correlations between physicochemical indices and taste palatability among 63 indica rice variet-ies,the quality indices,taste palatability values,and taste scores of the 63 indica rice materials were determined.The materi-als were classified into different grades based on amylose content and taste score.According to amylose content,the materials were divided into high-amylose and medium-amylose types,with no low-amylose type identified.In the high-amylose type,moisture content showed a significant positive correlation with starch content,a highly significant negative correlation with protein content,while protein content showed a significant negative correlation with starch content.In the medium-amylose type,moisture content showed highly significant negative correlations with protein,fat,starch,and amylopectin contents.For the high-amylose type,taste score showed a significant positive correlation with starch content,whereas for the medium-amylose type,taste score showed highly significant negative correlations with fat and protein contents.According to taste grade classification,only the grade 4 materials exhibited significant correlations between taste score and physicochemical properties.The correlations between physicochemical properties and taste score were not entirely consistent between the high-amylose and medium-amylose indica rice types,and discrepancies were observed between measured taste scores and taste palatability evaluation results.
