豆瓣酱中微生物及其功能菌株调控的研究进展OA

豆瓣酱特征风味源于霉菌、细菌与酵母菌的协同代谢.制曲阶段,霉菌分泌酶系降解原料生成风味前体;发酵中期,细菌产酸构建抑菌环境并促进酯合成;后期,酵母菌通过酯化等生成香气化合物.近年引入的功能菌株定向调控,虽能优化酶活性与代谢路径,但多聚焦单一菌种,对多菌互作及工艺适配性的定量解析仍不足.通过系统评述三类微生物在豆瓣酱风味形成中的作用,并指出当前调控策略的局限性,为豆瓣酱工艺优化及传统发酵食品现代化提供理论参考.

The characteristic flavor of broad bean paste arises from the synergistic metabolism of molds,bacteria,and yeasts.During the koji-making stage,molds secrete enzyme systems that degrade raw materials to generate flavor precursors.In the mid-fermentation stage,bacteria produce acids to create an antimicrobial environment and promote ester synthesis.In the late stage,yeasts generate aroma compounds via esterification and related reactions.In recent years,the introduction of directed regulation of functional strains has optimized enzyme activities and metabolic pathways;however,most studies focus on single species,and quantitative analyses of multi-species interactions and process adaptability remain insufficient.This paper systematically reviews the roles of the three microbial groups in flavor formation and highlights the limitations of current regulation strategies,providing a theoretical reference for process optimization of broad bean paste and the modernization of traditional fermented foods.
