Advances in the application of pulsed electric field technology for fruit and vegetable preservation

脉冲电场(Pulsed Electric Fields,PEF)作为一种新型物理保鲜技术,具有作用时间短、产热少、能耗低且对物料品质无不良影响等优势,在果蔬保鲜领域展现出良好的应用潜力.PEF 保鲜机理主要体现在两个方面:一是在果蔬表面通过电离作用产生臭氧等活性粒子,从而有效杀灭微生物;二是通过激活果蔬内部的生理代谢活动,调控内源酶活性,进而延缓其成熟与衰老过程.通过对脉冲电场技术特点、保鲜机制、应用现状及存在问题进行系统的综述,以期为该技术在果蔬保鲜中的进一步研究与开发提供参考.

As an innovative physical preservation technology,pulsed electric fields(PEF)exhibits the advantages of short treatment time,low heat generation,low energy consumption,and negligible adverse effects on material quality,thus possessing great application potential in the preservation of fruits and vegetables.The preservation mechanism of pulsed electric field mainly involves two aspects:1)ionization on the surface of fruits and vegetables generates ozone and other active particles,which effectively kills microorganisms;2)activation of internal physiological metabolism in fruits and vegetables regulates endogenous enzyme activity,thereby delaying maturation and aging.This paper systematically reviews the technical characteristics,preservation mechanism,application status,and current challenges of PEF,aiming to provide insights for the advancement of fruit and vegetable preservation technology.
