为分析不同粉碎粒度对全麦粉理化特性和糊化特性的影响,以7个小麦品种为试验材料,使用旋风式样品磨研磨制得全麦粉,测定不同粉碎粒度全麦粉的基础品质和黏度参数.结果表明,粉碎粒度的大小直接影响全麦粉的水分和灰分含量,粉碎粒度越小全麦粉的水分含量越低、灰分含量相对越高,蛋白质和湿面筋含量随粒度增大呈先升后降的趋势,湿面筋含量整体变化较小.全麦粉的粉碎粒度大小对其糊化能力、凝胶特性和回升老化特性影响显著,粉碎粒度较小的更容易糊化,且糊化温度更低(百农207更高),峰值黏度也更高,全麦粉的糊化能力差异越显著;粉碎粒度越小衰减值越高,凝胶抗剪切能力越差,全麦粉的凝胶特性差异越显著;粉碎粒度越小,最终黏度和回升值越低,凝胶越不易老化.峰值黏度与最低黏度、衰减值、最终黏度、回升值等黏度性状相关程度比较高,灰分与峰值黏度、衰减值、回升值等黏度性状相关程度比较高,水分、蛋白质和湿面筋含量与各黏度性状均有一定的相关性,相关系数的大小因性状不同而有所差异.

To analyze the effects of different grinding particle sizes on the physicochemical and gelatini-zation properties of whole wheat flour,seven wheat(Triticum aestivum L.)varieties were used as ex-perimental materials.Whole wheat flour was prepared by using a cyclone sample grinder,and the bas-ic quality and viscosity parameters of whole wheat flour with different grinding particle sizes were measured.The results showed that the size of the grinding particle directly affected the moisture and ash content of whole wheat flour.The smaller the grinding particle size,the lower the moisture con-tent of whole wheat flour and the relatively higher ash content.The protein and wet gluten content showed a trend of increasing first and then decreasing with the increase of particle size.The overall change in wet gluten content was relatively small.The size of the grinding particle of whole wheat flour had a significant impact on its gelatinization ability,gelation characteristics,and recovery aging characteristics.The flour with a smaller grinding particle size was more prone to gelatinization,and the gelatinization temperature was higher(with Bainong207 being higher),and the peak viscosity was also higher.The differences in the gelatinization ability of whole wheat flour were more significant.The smaller the grinding particle size,the higher the decrement value,the worse the gelant resist-ance,and the more significant the differences in gel properties of whole wheat flour.The final viscosi-ty and recovery value were lower,and the gel was less prone to aging.The peak viscosity was highly correlated with the lowest viscosity,decrement value,final viscosity,and recovery value among the viscosity traits.Ash content was highly correlated with the peak viscosity,decrement value,and re-covery value among the viscosity traits.Moisture,protein and wet gluten content had certain correla-tions with each viscosity trait,and the correlation coefficients varied depending on the trait.
