目的:为评价不同品种西兰花栽培价值,明确效益优势、营养价值优势及综合优势品种的筛选标准,选出各维度优质西兰花品种.方法:采用分光光度法、Bradford法、苯酚-硫酸法等方法,以固原市蔬菜大县种植的8个西兰花品种为试材,对其外观品质(农艺性状、商品性、产量)和营养成分(维生素、可溶性糖、可溶性蛋白、微量元素、硫苷、黄酮类等)进行测定,通过方差分析、多重比较(Tukey Test/Fisher Test)及隶属函数法、综合评价指数法综合评定各品种效益与营养品质,分析8个西兰花品种的营养共性和个性.结果:不同品种西兰花外观品质和营养品质存在显著差异:①效益优势品种美青70平均单产最高(29 935.50 kg/hm²),较对照增产23.80%,经济效益达16.46万元/hm²,较对照增收33.50%;中青16、喜迎门次之,较对照增产增收均超10%,三者商品性均优;②营养价值优势品种美青70可溶性蛋白最高(19.82 mg/g),中青16维生素C(63.16 mg/100g)、山奈酚(4.52 mg/100g)最优,喜迎门可溶性糖(23.70 mg/g)、硒(13.27 µg/100g)含量较高,均至少2项核心指标显著高于对照;③所有品种均富含维生素C(54.21~63.16 mg/100g)、维生素A(733.39~739.35 µg/100g)、钾、硒等,矿质元素营养质量指数(INQ)均>1,且含萝卜硫素(0.54~1.23 mg/100g)、山奈酚(1.97~4.52 mg/100g)等活性成分;④可溶性固形物(均1.33RI)、钾、钙等含量在品种间无统计学差异(P>0.05).结论:美青70为综合优势品种,中青16为活性成分突出的营养价值优势品种,喜迎门为可溶性糖和维生素A含量领先的效益—营养均衡品种,三者均优于对照,可根据生产需求推广种植.

[Objective]To evaluate the cultivation value of different broccoli varieties,clarify the screening criteria for varieties with benefit advantages,nutritional value advantages and comprehensive advantages,and select high-quality broccoli varieties in each dimension.[Method]Eight broccoli varieties grown in major vegetable-producing counties of Guyuan City were used as test materials.Spectrophotometry,Bradford method,phenol-sulfuric acid method and other techniques were employed to determine their appearance quality(agronomic traits,marketability,yield)and nutritional components(vitamins,soluble sugar,soluble protein,trace elements,glucosinolates,flavonoids,etc.).Analysis of variance(ANOVA),multiple comparisons(Tukey Test/Fisher Test),membership function method and comprehensive evaluation index method were used to comprehensively assess the benefits and nutritional quality of each variety,and the nutritional commonalities and individualities of the eight broccoli varieties were analyzed.[Result]There were significant differences in ap-pearance quality and nutritional quality among different broccoli varieties:①Varieties with benefit advantages:Meiqing 70 had the highest average yield(29,935.5 kg/hm²),23.80%higher than the control,with an economic benefit of 164,600 yuan/hm²,33.50%higher than the control;Zhongqing 16 and Xiyingmen followed,with yield and income increases exceeding 10%compared with the control,and all three had excellent marketability;②Varieties with nutritional value advantages:Meiqing 70 had the highest soluble protein content(19.82 mg/g);Zhongqing 16 was superior in vitamin C(63.16 mg/100g)and kaempferol(4.52 mg/100g);Xiyingmen led in soluble sugar(23.70 mg/g)and selenium(13.27 µg/100g),and all had at least 2 core indicators significantly higher than the control;③Nutritional commonalities:All varieties were rich in vitamin C(54.21-63.16 mg/100g),vitamin A(733.39-739.35 µg/100g),potassium,selenium,etc.The nutritional quality index(INQ)of mineral elements was all>1,and they contained active components such as sulforaphane(0.54-1.23 mg/100g)and kaempferol(1.97-4.52 mg/100g);④Indicators with no significant differences:There were no statistical dif-ferences in the contents of soluble solids(all 1.33 RI),potassium,calcium,etc.among varieties(P>0.05).[Conclusion]Meiqing 70 is a comprehensive advantage variety(optimal in both benefit and nutrition),Zhongq-ing 16 is a variety with prominent advantages in active components,and Xiyingmen is a benefit-nutrition bal-anced variety with leading soluble sugar and vitamin A contents.All three are superior to the control and can be popularized and planted according to production needs.
