微波辅助对桑叶提取物浓缩干燥的协同增效研究OA

为系统评价不同浓缩与干燥方式对桑叶粗提物粉品质的影响,本研究以旋蒸浓缩结合喷雾干燥(SC)作为对照,引入微波处理技术,设置了旋蒸浓缩-热风干燥(XR)、旋蒸浓缩-微波干燥(XW)、微波浓缩-热风干燥(WR)和微波浓缩-微波干燥(WW)4 种组合工艺,比较了各组样品在物化特性、微观结构、主要营养与活性成分保留率以及体外抗氧化活性等方面的差异.结果表明:WW组在加工效率上具有显著优势,其浓缩与干燥总时长较XR组缩短了约 90%.在物化特性方面,微波干燥明显改变了粉体的微观形貌,但未破坏其主要化学骨架.与SC组相比,WW组中可溶性蛋白与多糖含量分别提高了 39%与 49%,黄酮与多酚含量最高,分别增加 54%与 118%,且 1-脱氧野尻霉素(1-DNJ)损失最低,仅下降约 22%.抗氧化活性评价显示,WW组对DPPH∙与ABTS∙自由基的清除能力最强.相关性分析表明,ABTS∙自由基清除率与多酚含量呈极显著正相关(P<0.01),而DPPH∙自由基清除率与多酚含量仅呈较弱的正相关.主成分分析进一步表明,浓缩方式对样品整体特征的影响相对有限,而干燥方式是引起样品间差异的关键因素,显著增强了样品间的变异性.综上,微波浓缩结合微波干燥是一种高效且极具应用潜力的桑叶粗提物粉加工技术,可为该类功能原料的工业化生产提供可靠的技术支撑.

This study systematically evaluated the effects of different concentration and drying strategies on the quality attributes of mulberry leaf crude extract powder.Conventional rotary evaporation followed by spray drying(SC)was used as the control process.Microwave-assisted processing was introduced to establish four additional combinations,rotary evaporation-hot air drying(XR),rotary evaporation-microwave drying(XW),microwave concentration-hot air drying(WR),and microwave concentration-microwave drying(WW).The samples were comprehensively compared in terms of physicochemical properties,microstructure,retention of major nutritional and bioactive components,and in vitro antioxidant activity.The results demonstrated that the WW treatment exhibited a marked advantage in processing efficiency,with the total concentration and drying time reduced by approximately 90%compared with the XR group.Microwave drying significantly modified the powder microstructure without disrupting the principal chemical backbone.Relative to the SC group,the WW group showed increases of 39%and 49%in soluble protein and polysaccharide contents,respectively.Flavonoid and total phenolic contents reached the highest levels,increasing by 54%and 118%,respectively,while the loss of 1-deoxynojirimycin(1-DNJ)was minimized to approximately 22%.Antioxidant assays indicated that the WW group exhibited the strongest scavenging activities against DPPH∙ and ABTS∙ radicals.Correlation analysis revealed a highly significant positive correlation between ABTS∙ radical scavenging activity and total phenolic content(P<0.01),whereas the correlation between DPPH∙ scavenging activity and phenolic content was comparatively weak though still positive.Principal component analysis further indicated that the concentration method exerted a relatively limited influence on overall sample characteristics,whereas the drying method was the dominant factor driving inter-sample variation and significantly amplified differences among treatments.In conclusion,microwave concentration combined with microwave drying represents an efficient and promising processing strategy for mulberry leaf crude extract powder,providing robust technical support for the industrial production of functional plant-based ingredients.
