文章旨在研究日粮中添加不同水平包被γ-氨基丁酸(GABA)对羔羊生长性能、肉品质、屠宰性能及肌内脂肪酸组成的影响.试验选取 64 只体重相近[(20.50±1.20)kg]、健康状况良好的 2 月龄杜寒杂交断奶公羔,随机分为 4 组,每组 4 个重复,每个重复 4 只.对照组(CON)饲喂基础日粮,试验组在基础日粮中分别添加 50 mg/kg(G1)、100 mg/kg(G2)、150 mg/kg(G3)的包被GABA.预饲期 14 d,正试期 70 d.结果表明:(1)与CON组相比,G2 组和G3组羔羊的平均日增重(ADG)极显著提高(P<0.01),料重比(F/G)极显著降低(P<0.01),且G2 组ADG显著高于G3组(P<0.05),G1 组与CON组差异不显著(P>0.05);(2)G2 组宰前活重、胴体重极显著高于其他各组(P<0.01),屠宰率和眼肌面积显著高于CON组和G1 组(P<0.05),但与G3 组差异不显著(P>0.05);(3)G2 组背最长肌的pH45min和pH24h显著高于CON组(P<0.05),滴水损失和剪切力显著低于CON组(P<0.05),G1 组和G3 组上述指标与CON组均无显著差异(P>0.05);(4)G2 组肌内总不饱和脂肪酸(UFA)含量显著高于CON组和G1 组(P<0.05),其中油酸和亚油酸含量显著增加(P<0.05),饱和脂肪酸含量显著降低(P<0.05),G3 组各脂肪酸指标与G2 组差异不显著(P>0.05).综合各指标,日粮添加 100 mg/kg包被GABA可有效改善羔羊的生长性能、肉品质和屠宰性能,优化肌内脂肪酸组成.

This experiment aimed to investigate the effects of adding different levels of coated γ-aminobutyric acid(GABA)to the diet on the growth performance,meat quality,slaughter performance,and intramuscular fatty acid composition of lambs.A total of 64 healthy 2-month-old male lambs of the Du-Han crossbreed with similar body weight(20.50±1.20 kg)and good health status were selected and randomly divided into 4 groups,with 4 replicates in each group and 4 lambs in each replicate.The control group(CON)was fed the basal diet,while the experimental groups were supplemented with 50 mg/kg(G1),100 mg/kg(G2),and 150 mg/kg(G3)of coated GABA in the basal diet.The pre-test period was 14 days,and the main test period was 70 days.The results showed:(1)Compared with the CON group,the average daily gain(ADG)of lambs in the G2 group and G3 group was significantly increased(P<0.01),and the feed-to-weight ratio(F/G)was significantly decreased(P<0.01).The ADG of the G2 group was significantly higher than that of the G3 group(P<0.05),and there was no significant difference between the G1 group and the CON group(P>0.05);(2)The pre-slaughter live weight and carcass weight of the G2 group were significantly higher than those of the other groups(P<0.01),the slaughter rate and eye muscle area were significantly higher than those of the CON group and the G1 group(P<0.05),but there was no significant difference between the G3 group(P>0.05);(3)The pH at 45 minutes and 24 hours of the longest back muscle of the G2 group was significantly higher than that of the CON group(P<0.05),and the drip loss and shear force were significantly lower than those of the CON group(P<0.05).The above indicators of the G1 group and G3 group were not significantly different from those of the CON group(P>0.05);(4)The total unsaturated fatty acid(UFA)content in the intramuscular tissue of the G2 group was significantly higher than that of the CON group and the G1 group(P<0.05),with significantly increased contents of oleic acid and linoleic acid(P<0.05),and significantly decreased saturated fatty acid content(P<0.05).The indicators of each fatty acid in the G3 group were not significantly different from those of the G2 group(P>0.05).In summary,adding 100 mg/kg of coated GABA to the diet can effectively improve the growth performance,meat quality,and slaughter performance of lambs and optimize the intramuscular fatty acid composition.
