为系统比较传统厌氧发酵与间歇曝气发酵对农用酵素制备效率和品质的影响,实现尾菜的资源化利用以及提高尾菜农用酵素制备效率,以小白菜尾菜、番茄尾菜和红萝卜尾菜为原料,通过动态监测发酵过程中pH、电导率及还原糖含量的变化,并结合发酵产物的总酸度、抗氧化酶活性及酚类物质含量等指标,评估不同尾菜间歇曝气发酵制备农用酵素的综合效果.结果表明:间歇曝气发酵会提高尾菜农用酵素制备的发酵速率,缩短各理化指标稳定时间,番茄尾菜、小白菜尾菜和红萝卜尾菜间歇曝气发酵组还原糖含量达到稳定的时间比传统厌氧发酵分别提前了 20、30和8d;尾菜自身特性与发酵方式共同决定了各项指标和酵素特性的变化;利用番茄尾菜在间歇曝气发酵方式下制备农用酵素效果最佳,发酵第90天总酸度为7.70 g/L,酶活性最高.与传统厌氧发酵相比,间歇曝气发酵过程中的超氧化物歧化酶、过氧化物酶、过氧化氢酶、淀粉酶活性分别提高了 22.72%、19.77%、26.09%和66.71%;酚类等活性物质含量最高;总酚、总黄酮含量分别提高了 7.45%、29.59%.本研究可为实现尾菜的资源化利用以及提高尾菜农用酵素制备效率提供理论依据与工艺参考.

This study aims to systematically compare the effects of traditional anaerobic fermentation and intermittent aeration fermentation on the efficiency and quality of agricultural jiaosu preparation,to realize the resource utilization of vegetable residues and improve the efficiency of agricultural jiaosu preparation of vegetable residues.The comprehensive effects of batch aeration fermentation in the preparation of agricultural jiaosu from different vegetable residues were evaluated by dynamically monitoring the changes in pH,the conductivity and reducing sugar content during fermentation,and by combining the total acidity,antioxidant enzyme activity and phenolic content of fermentation products.The results show that intermittent aeration fermentation increases the fermentation rate of agricultural jiaosu preparation from vegetable residues,and shortens the stabilization time of various physical and chemical indices.The time to stabilize the reducing sugar content of tomato residues,Pak choi residues,and carrot residues fermentation group was 20,30,and 8 days earlier than that of traditional anaerobic fermentation,respectively.Both the characteristics of the tail vegetable and the fermentation method jointly determined the changes in various indicators and enzyme characteristics.The agricultural jiaosu was prepared by using tomato residues under intermittent aeration fermentation,with a total acidity of 7.70 g/L on the 90th day of fermentation,and its enzyme activity was the highest.Compared with traditional anaerobic fermentation,the activities of superoxide dismutase,peroxidase,catalase,and amylase in batch aeration fermentation increased by 22.72%,19.77%,26.09%and 66.71%,respectively.The active substances,such as phenols,reached the highest content;the contents of total phenols and total flavonoids increased by 7.45%and 29.59%,respectively.This study provides a theoretical basis and technical reference for the resource utilization of vegetable residues and the enhancement of agricultural jiaosu preparation efficiency of vegetable residues.
