为研究浓缩乳蛋白在低钠盐重组肉中的应用,采用膜分离法对脱脂乳进行浓缩处理,制备不同超滤次数的浓缩乳蛋白,利用浓缩乳蛋白的交联特性将其应用于重组肉制品中,分析不同蛋白含量对重组肉质构特性和蒸煮损失的影响,研究不同钠盐添加量对重组肉拉伸强度、持水力、蒸煮损失的影响并进行优化实验,得出最佳低钠盐重组肉制作配方.结果表明:超滤 4 次后浓缩乳蛋白的蛋白含量达到了 66.3%;由浓缩乳蛋白制备不同钠盐添加量的重组肉,低钠盐组拉伸强度、持水力、蒸煮损失的结果均优于高钠盐组;在低钠盐重组肉优化实验中,浓缩乳蛋白的最佳添加量为3%,谷氨酰胺转氨酶(TGase)的最佳添加量为 1%,最佳模具压制时间为 4 h,复合磷酸盐的最佳添加量为 0.3%.与酪蛋白酸钠相比,浓缩乳蛋白在低钠盐条件下更适于重组肉加工.本研究为浓缩乳蛋白的后续应用提供理论依据.

To explore the application of milk protein concentrate in low-sodium restructured meat,skimmed milk was con-centrated by membrane separation to prepare milk protein concentrates with different ultrafiltration times.The cross-linking properties of milk protein concentrate were applied to restructured meat products,and the effects of different protein contents on the textural properties and cooking loss of restructured meat were analyzed.Based on this,the effects of different sodium salt addition levels on the tensile strength,muscle water-holding capacity,and cooking loss of restructured meat were stud-ied.Then single factor experiments were conducted to determine the optimal formulation for low-sodium restructured meat.The results showed after four rounds of ultrafiltration,the protein content of the milk protein concentrate reached 66.3%.In restructured meat prepared with milk protein concentrate at varying sodium salt addition levels,the low-sodium group showed better tensile strength,water-holding capacity,and cooking loss compared to the high-sodium salt group.In the sin-gle factor experiment for low-sodium restructured meat,the optimal addition levels were 3%for milk protein concentrate,1%for TGase,a mold pressing time of 4 hours,and 0.3%for composite phosphates.In summary,compared with sodium caseinate,milk protein concentrate is more suitable for processing reconstructed meat under low-sodium salt conditions,thus providing a theoretical basis for its further application.
