试验研究戊糖片球菌368菌对杜撒猪粪便中真菌、肉品质及脂溶性维生素含量的影响.采用单因素试验设计,选用体重约为77 kg的杜撒猪20头,随机分为2组,每组10头.试验组饮水中添加戊糖片球菌368(1010 CFU/L).试验期为28 d.试验结束当天进行屠宰测定,通过肉品质测定、粪便真菌及脂溶性维生素含量分析,研究戊糖片球菌368对杜撒猪的影响.结果显示:①主坐标分析(principal coordinates analysis,PCoA)发现,试验组和对照组样品未能完全分开,添加戊糖片球菌368后,试验组的物种相似性趋于一致.②门水平上,对照组相对丰度最高的为毛霉门,试验组相对丰度最高的为壶菌门;在属水平上,相对丰度大于1.0%的共20个菌属,对照组和试验组相对丰度最高的为根孢囊霉属.③碳水化合物活性酶数据库(Carbohydrate-Active enZYmes Database,CAZy)水平功能分析发现,在2级水平上,CAZy优势基因功能注释为20大通路.④肉品质分析发现,两组间肉品质差异均不显著(P>0.05).氨基酸成分分析发现,两组之间无显著差异(P>0.05).⑤代谢组学分析发现,肝脏中维生素A和肾脏中全反式视黄醇含量显著提高(P<0.05),血清中α-生育酚和β-生育酚含量则显著下降(P<0.05).综上所述,在杜撒猪饮水中添加戊糖片球菌368,粪便中真菌的物种趋于一致,提高了肝脏中维生素A和肾脏中全反式视黄醇含量,降低血清中α-生育酚和β-生育酚含量,具有提高氨基酸、脂肪代谢和复杂碳水化合物利用相关菌和酶类的益生功能.

The study aimed to explore the effects of Pediococcus pentosaceus 368 in the fecal fungi,meat quality,and fat-soluble vitamin of Duroc×Saba pig.Twenty Duroc×Saba pigs which body weight were about 77 kg were randomly divided into 2 groups with 10 pigs per group which was used the single-factor experi-mental designp.The pigs in experimental group(group FA)were drinked with the water adding Pediococcus pentosaceus 368(1010 CFU/L).The experiment lasted for 28 d.On the day of the end of the experiment,slaughterings were conducted.The effects of Pediococcus pentosaceus 368 on Duroc×Saba pigs were ana-lyzed through the meat quality,fecal fungi,and the analysis of fat-soluble vitamin content.The results showed as follows:① principal coordinates analy-sis(PCoA)revealed that samples from the two groups were not completely separated.After adding Pediococcus pentosaceus 368,the species similarity in the experimental group tended to be consistent.② At the phylum level,the highest rela-tive abundance in the control group was Mucoro-mycota,while in the experimental group,it was Chytridiomycota.At the genus level,there were 20 genera with a relative abundance greater than 1.0%.The highest relative abundance in both groups was Rhizopus.③ The CAZy(Carbohydrate-Active enZYmes Database)level functional analysis found that at the second level,the dominant CAZy gene functions were annotated into 20 major pathways.④ Meat quality analysis showed that there was no significant(P>0.05)among two groups.Amino acid composition analysis revealed no significant differences between the two groups(P>0.05).⑤ Metabolomics analysis found that the content of vitamin A in liver and all-trans retinol in the kidneys significantly increased(P<0.05),while the content of α-tocopherol and β-tocopherol in the serum significantly decreased(P<0.05).In summary,adding Pedio-coccus pentosaceus 368 to the drinking water of Duroc×Saba pig led to a consistent species composition of fungi in the feces,increased the content of vitamin A in liver and all-trans retinol in the kidneys,and decreased the content of α-tocopherol and β-tocopherol in the serum,demonstrating probiotic functions in enhancing amino acid and fat metabolism-related bacteria,enzymes and complex carbohydrate utilization.
