蓝莓因风味独特、营养丰富,市场需求持续增长,但鲜果易腐与供给季节性波动使加工环节在减损增值、稳定供给并延长产业链中的枢纽作用日益凸显,因此梳理全球蓝莓产业扩张与贸易格局演变,分析我国蓝莓产业规模格局、栽培模式、品种与消费渠道特征,并聚焦蓝莓加工产业发展现状与主要瓶颈.明确当前蓝莓加工产业面临的核心挑战——原料波动与标准化不足、深加工比重偏低及品质稳定性不足、副产物高值化闭环尚未形成等,总结数字化与人工智能在蓝莓加工及产业链中的应用价值及约束.在此基础上提出以加工为枢纽,推进原料分级与工艺适配协同,构建以品质稳定为导向的深加工体系,推动副产物闭环产业化,并以标准体系与数据机制强化产业链韧性,探索蓝莓产业高质量发展路径,促进蓝莓产业的可持续发展.

Blueberry demand is growing because blueberries taste good and are rich in nutrients.Fresh blueberries spoil easily,and supply changes a lot seasonally.So blueberry processing is impor-tant to cut postharvest loss,increase value,keep supply steady,and extend the value chain.This pa-per summarizes the growth of the global blueberry industry and changes in international trade.It then describes China's blueberry industry by looking at production scale,cultivation methods,variety structure,and sales and distribution channels.The paper also reviews the current situation of blue-berry processing in China and points out key problems.China's blueberry processing industry still faces challenges from fluctuations in raw material supply and insufficient standardization.Deep pro-cessing is still a small part of the industry,and product quality is not stable enough.In addition,a large-scale closed-loop system for high-value use of by-products has not yet been built.The paper also outlines how digital tools and artificial intelligence can be used in processing and along the sup-ply chain,and it notes the main limits in real use.Finally,a processing-centered pathway is pro-posed,emphasizing raw-material grading and process matching,deep-processing development ori-ented towards stable quality,closed-loop industrialization of by-products,and improved standards and data governance to strengthen supply chain resilience.These steps can help blueberry industry move toward higher quality and long-term development.
