中药渣发酵饲料对西门塔尔育肥牛屠宰性能和肉品质的影响OA
Effect of Fermented Feed with Traditional Chinese Medicine Residue on Slaughter Performance and Meat Quality of Simmental fattening Cattle
通过研究中药渣发酵饲料对西门塔尔育肥牛屠宰性能和肉品质性状的影响,评价不同饲料饲喂后西门塔尔牛的肉用特征.选取24头20~24月龄的西门塔尔牛,随机均分为3组,对照组饲喂中药渣+罗汉果渣+玉米基础日粮,小麦组饲喂中药渣+罗汉果渣+30%小麦替代玉米日粮,大麦组饲喂中药渣+罗汉果渣+30%大麦替代玉米日粮.饲养90 d后,每组各选1头牛进行屠宰,对其屠宰性能和肉品质进行测定分析.结果表明,3组牛的日增重无显著差异(P>0.05);在屠宰性能方面,胴体重小麦组(406.4 kg)和大麦组(387.0 kg)较对照组(415.2 kg)分别降低2.12%和6.79%;净肉重以对照组(359.2 kg)最高,小麦组和大麦组分别为352.0和353.1 kg;大麦组骨重61.2 kg,高于对照组(55.9 kg)和小麦组(53.0 kg);大麦组眼肌面积较对照组、小麦组分别提高6.43%和13.25%.在肉品质方面,3组牛肉剪切力处于42~45 N的优质嫩肉区间;大麦组牛肉中锌、硒、铁含量均高于小麦组,但与对照组差别不大.综上可知,30%大麦替代玉米和中药渣发酵饲料可改善饲料适口性,虽未能显著提升西门塔尔牛生长速度与屠宰率,但可显著改善肉品质.
This study was conducted to investigate the effects of fermented feed with traditional Chinese medicine residue on the slaughter performance and meat quality traits of Simmental cattle,and evaluate the meat production characteristics of cattle fed different dietary formulations.A total of 24 Simmental cattle aged 20 to 24 months were randomly divided into three groups(8 per group).The control group was fed with a basal diet of fermented traditional Chinese medicine dregs,arhat fruit dregs,and corn.In the wheat group,30%of the corn in the basal diet was replaced with wheat,while in the barley group was fed a diet,30%of the corn was replaced with barley.After 90 days of feeding,one animal from each group was slaugh-tered for determination of slaughter performance and meat quality traits.The results showed no significant difference in average daily gain among the three groups(P>0.05).In terms of slaughter performance,the carcass weight in the wheat group(406.4 kg)and barley group(387.0 kg)decreased by 2.12%and 6.79%respectively compared to the control group(415.2 kg).The net meat weight was the highest in the control group(359.2 kg),with 352.0 kg in the wheat group and 353.1 kg in the barley groups.The bone weight of the barley group was 61.2 kg,which was higher than that in the control group(55.9 kg)and the wheat group(53.0 kg).The eye muscle area of the barley group increased by 6.43%and 13.25%respectively compared to the control and wheat groups.Regarding meat quality,the shear force values of the three groups of beef was in the high-quality tender meat range of 42 to 45 N.The zinc,selenium,and iron contents in the barley group beef were higher than those in the wheat group,but the difference was not sig-nificant compared to the control group.Overall,it can be concluded that replacing corn and fermented feed with 30%barley can improve feed palatability.Although it did not significantly improve the growth rate and slaughter rate of Simmental cattle,it can significantly improve meat quality.
