Investigation of Processing Quality and Flour Blending Properties of Zhengmai 369
为系统评价郑麦369的加工品质及其配粉效应,本研究比较两年间13个地区的品质指标,明确该品种在不同环境下的品质特性;结合新麦26(强筋品种)、郑麦136(中筋品种)的理化特性,设置8:2、6:4、4:6、2:8四种配粉比例,解析郑麦369与新麦26复配的面包烘焙特性、与郑麦136复配的面条蒸煮品质.结果表明,郑麦369的蛋白质含量(16.7%)、湿面筋含量(33.8%)、吸水率(69.1%)、拉伸面积(100.3 cm²)及最大拉伸阻力(500.8 EU)等指标符合国家优质强筋小麦标准,稳定时间(8.1 min)达到中强筋小麦标准,呈现出独特的品质特征.配粉试验显示,当郑麦369与新麦26按4:6复配时,面包评分为90.8分,接近对照加西硬红春2号(91.4分),且复配后的吸水率、蛋白质含量及湿面筋含量显著高于新麦26单粉,证实其具有强筋增效特性;郑麦369单粉面条评分(89.5分)显著高于郑麦136(80.5分),按4:6复配可使面条评分提升至85.2分,较郑麦136单粉提高6.0%.本研究揭示了郑麦369具有强筋增效和中筋改良双重功能,可分别用于开发优质面包专用粉和高品质面条粉,为小麦加工企业优化原料配比提供了理论支持.
To systematically evaluate the processing quality of Zhengmai 369 and its blending effects,a comprehensive analysis was conducted on quality indicators from 13 regions over two years to clarify Zhengmai 369 quality characteristics under different environments.Based on the physicochemical properties of Xinmai 26(a strong gluten variety)and Zhengmai 136(a medium gluten variety),four blending ratios(8:2,6:4,4:6,2:8)were established to analyze the bread-baking characteristics of Zhengmai 369 blended with Xinmai 26,as well as the noodle-cooking quality of Zhengmai 369 blended with Zhengmai 136.The results showed that Zhengmai 369 met the national standards for high-quality strong gluten wheat in terms of protein content(16.7%),wet gluten content(33.8%),water absorption rate(69.1%),extensibility area(100.3 cm²),and the maximum resistance to extension(500.8 EU).Its stability duration(8.1 min)reached the standard for medium-strong gluten wheat,demonstrating unique quality characteristics.The blending tests revealed that when Zhengmai 369 was blended with Xinmai 26 at 4︰6 ratio,the bread score reached 90.8,close to that of the control Canadian Western Red Spring 2(91.4).Additionally,the blended flour exhibited significantly higher water absorption,protein content,and wet gluten content compared with Xinmai 26 alone,confirming its strong gluten-enhancing effect.The noodle score of Zhengmai 369 alone(89.5)was significantly higher than that of Zhengmai 136(80.5).Blending at a 4:6 ratio increased the noodle score to 85.2,representing a 6.0%improvement over Zhengmai 136 alone.In conclusion,this study demonstrates that Zhengmai 369 possesses dual functionalities of enhancing strong gluten and improving medium gluten quality.It can be used to develop specialized high-quality bread flour and premium noodle flour,providing theoretical support for wheat processing enterprises to optimize raw material formulations.
