采收时间对雪茄烟叶晾制过程中细菌群落结构及烟叶品质的影响OA
Effects of harvest time on bacterial community structure and quality of cigar tobacco leaves during air-curing
[目的]明确采收时间对雪茄烟叶晾制过程中细菌群落结构及烟叶品质的影响,以期为国产优质雪茄烟叶生产提供理论依据和技术参考.[方法]以'古巴7号'品种为试验材料,设置3个采收时间处理(T1:打顶后20 d采收;T2:打顶后25 d采收;T3:打顶后30 d采收),分析不同时间采收的雪茄烟叶在晾制过程中细菌群落结构及外观质量、关键化合物含量和感官质量的变化规律.[结果]随着采收时间的推迟,烟叶表面细菌群落种类增多,但晾制过程中不同处理烟叶表面优势细菌属相同,均为鞘氨醇单胞菌属(Sphingomonas);在晾制过程中,烟叶表面细菌群落结构中菌属之间主要呈正相关关系,表现出较强的共生关系;采收越晚的烟叶在晾制过程中颜色变化越快,尤其是变黄期和变褐期;新鲜烟叶中碳水化合物质量分数表现为T3>T2>T1,而含氮化合物质量分数表现相反;在一定范围内,烟叶的烟气特征与风格特征随采收时间的延迟逐渐凸显.[结论]不同采收时间的雪茄烟叶在晾制过程中的优势细菌属相同,均为鞘氨醇单胞菌属(Sphingomonas),适当延迟采收可提高鲜烟叶表面该优势细菌属的物种丰富度,并显著降低鲜烟叶中的蛋白质质量分数,使得发酵后烟叶的烟气浓度和透发性改善,木香、蜜甜香、花粉香等香韵得以彰显,品质显著提升.
[Objective]The impact of harvesting time on the bacterial community structure and quality of cigar tobacco leaves during air-curing was investigated to offer a theoretical foundation and technical guidance for the production of high-quality domestic cigar tobacco leaves.[Method]The Cuba-7 vari-ety was used as the experimental material in this study,and three harvest time treatments were set up(T1:harvested at 20 days after topping;T2:harvested at 25 days after topping;T3:harvested at 30 days after topping).The changes in bacterial community structure,appearance quality,main carbon and nitrogen compounds content and sensory quality of cigar tobacco leaves harvested at different times during air-curing were analyzed.[Result]With the delay of harvest time,the species of bacterial com-munity on the surface of tobacco leaves increased,but the dominant bacteria on the surface of tobacco leaves in different treatments were the same,all of which were Sphingomonas.During the air-curing process,the bacterial genera on the surface of tobacco leaves exhibited predominantly positive correla-tions,indicating a strong symbiotic relationship.The later the tobacco leaves were harvested,the faster the color changed during the air-curing process,especially during the yellowing and browning periods.The content of carbon-containing compounds in fresh tobacco leaves was T3>T2>T1,while the content of nitrogen-containing compounds showed the opposite trend.Within a specific limit,the smoke and style attributes of tobacco leaves intensify as the harvesting time is postponed.[Conclusion]The dominant genus of cigar tobacco leaves with different harvest time in the air-curing process was the same,all of which were Sphingomonas.Appropriately delaying harvest can increase the species rich-ness of the dominant genus on the surface of fresh tobacco leaves,and notably reduces the protein con-tent in fresh tobacco leaves,which in turn boosts the smoke concentration and permeability of the tobacco leaves following fermentation.Meanwhile,the aroma of woody,sweet and pollen can be high-lighted,and the quality can be significantly improved.
