驼乳运输与贮藏过程中品质劣变的影响因素分析及控制策略OA
Analysis of Influencing Factors and Control Strategies for Quality Deterioration of Camel Milk During Transportation and Storage
驼乳因其独特的营养成分和生物活性物质,作为一种天然功能性食品日益受到全球关注.然而,在运输与贮藏过程中,驼乳品质易受多种环境因素的显著影响.本综述系统分析了温度、时间、微生物、冻融、光照、运输震荡、卫生条件与运输设备等因素对驼乳品质的影响机制.现有研究表明,不当的温度控制会加速微生物繁殖与理化性质劣变;贮藏时间延长可导致pH值下降、脂肪上浮及蛋白质水解;嗜冷菌等微生物在冷藏条件下仍具活性,可引发脂肪与蛋白质分解;反复冻融会促进菌落总数增长;光照可诱导脂肪氧化与蛋白质变性;运输震荡可破坏乳化体系并激活脂肪酶活性;卫生条件与运输设备的不完善则增加了微生物污染风险.目前,针对驼乳运输与贮藏的标准仍以地方和行业标准为主,尚未形成统一的国家标准.未来应加强多因素协同效应研究,开发基于物联网、大数据等技术的智能化监测手段,优化储运参数与冷链设施,为保障驼乳品质、完善标准体系及促进驼乳产业高质量发展提供理论依据.
Camel milk is gaining global attention as a natural functional food due to its unique nutritional components and bioactive substances.However,during transportation and storage,the quality of camel milk is significantly susceptible to various environmental factors.This review systematically analyzes the mechanisms by which factors such as temperature,time,microorganisms,freeze-thaw cycles,light,transportation oscillation,sanitary conditions,and transportation equipment affect camel milk quality.Existing studies indicate that improper temperature control accelerates microbial proliferation and physicochemical deterioration;prolonged storage time leads to a decrease in pH value,fat rising,and protein hydrolysis;psychrophilic bacteria and other microorganisms remain active under refrigeration conditions,causing fat and protein decomposition;repeated freeze-thaw cycles promote an increase in total bacterial count;light exposure induces fat oxidation and protein denaturation;transportation oscillation disrupts the emulsion system and activates lipase activity;and inadequate sanitary conditions and transportation equipment increase the risk of microbial contamination.Currently,standards for camel milk transportation and storage remain primarily at regional and industry levels,with no unified national standard established.Future research should strengthen studies on multi-factor synergistic effects,develop intelligent monitoring methods based on technologies such as the Internet of Things and big data,and optimize storage and transportation parameters as well as cold chain facilities,thereby providing a theoretical basis for ensuring camel milk quality,improving the standard system,and promoting the high-quality development of the camel milk industry.
