为了研究日粮粗蛋白质水平对坝上长尾公鸡生长性能、屠宰性能及肉品质的影响,本试验选取 6 周龄体重相近的坝上长尾公鸡 300 只,随机分为 5 个处理组,每组 10 个重复,每个重复 6 只.5 个处理组分别饲喂粗蛋白质水平为 14%(Ⅰ组)、15%(Ⅱ组)、16%(Ⅲ组)、17%(Ⅳ组)、18%(Ⅴ组)的饲料,试验期 13 周.结果表明:Ⅲ组、Ⅳ组、Ⅴ组总增重与日增重均显著高于Ⅰ组、Ⅱ组(P<0.05);17 周龄时,Ⅲ组、Ⅳ组屠宰率、半净膛率显著高于Ⅰ组、Ⅱ组(P<0.05),Ⅰ组、Ⅲ组、Ⅴ组全净膛率显著高于Ⅱ组、Ⅳ组(P<0.05),Ⅲ组、Ⅴ组、Ⅳ组腹脂率显著低于Ⅰ组、Ⅱ组(P<0.05),Ⅲ组胸肌pH值显著高于其他组(P<0.05),Ⅰ组胸肌和腿肌粗蛋白质含量显著低于其他四组(P<0.05);Ⅲ组、Ⅳ组腿肌粗脂肪含量显著高于其他三组(P<0.05);19 周龄时,Ⅲ组、Ⅳ组、Ⅴ组屠宰率显著高于Ⅰ组和Ⅱ组(P<0.05),腹脂率显著低于Ⅰ组、Ⅱ组(P<0.05),Ⅲ组、Ⅳ组、Ⅴ组胸肌pH值、粗蛋白质含量及腿肌粗脂肪含量显著高于其他两组(P<0.05),Ⅱ组、Ⅲ组、Ⅳ组腿肌pH值显著高于Ⅰ组、Ⅴ组(P<0.05).结合坝上长尾公鸡的生长性能、屠宰性能及肉品质等各项指标,日粮粗蛋白质水平为 16%时其综合表现最佳.

This experiment was conducted to investigate the effects of dietary crude protein levels on growth perfor-mance,slaughter performance and meat quality of Bashang long-tailed roosters.A total of 300 6-week-old Bashang long-tailed roosters with similar body weight were selected and randomly assigned to 5 treatment groups,with 10 replicates per group and 6 chickens per replicate.The chickens in the five groups were fed diets with crude protein levels of 14%(Group Ⅰ),15%(Group Ⅱ),16%(Group Ⅲ),17%(Group Ⅳ)and 18%(Group Ⅴ)respectively,and the experimental peri-od lasted for 13 weeks.The results showed that the total weight gain and average daily gain of Group Ⅲ,Ⅳ and Ⅴ were significantly higher than those of Group Ⅰ and Ⅱ(P<0.05).At 17 weeks of age,the slaughter rate and semi-eviscerated percentage of Group Ⅲ and Ⅳ were significantly higher than those of Group Ⅰ and Ⅱ(P<0.05).The eviscerated percent-age of Group Ⅰ,Ⅲ and Ⅴ was significantly higher than that of Group Ⅱ and Ⅳ(P<0.05).The abdominal fat percentage of Group Ⅲ,Ⅳ and Ⅴ was significantly lower than that of Group Ⅰ and Ⅱ(P<0.05).The breast muscle pH value of Group Ⅲ was significantly higher than that of other groups(P<0.05).The crude protein contents in breast muscle and leg muscle of Group Ⅰ were significantly lower than those of the other four groups(P<0.05).The leg muscle crude fat contents of Group Ⅲ and Ⅳ were significantly higher than those of the other three groups(P<0.05).At 19 weeks of age,the slaugh-ter rate of Group Ⅲ,Ⅳ and Ⅴ was significantly higher,while the abdominal fat percentage was significantly lower than those of Group Ⅰ and Ⅱ(P<0.05).The breast muscle pH value,crude protein content and leg muscle crude fat content of Group Ⅲ,Ⅳ and Ⅴ were significantly higher than those of the other two groups(P<0.05).The leg muscle pH value of Group Ⅱ,Ⅲ and Ⅳ was significantly higher than that of Group Ⅰ and Ⅴ(P<0.05).Considering the indexes of growth performance,slaughter performance and meat quality,the dietary crude protein level of 16%exhibited the optimal compre-hensive performance for Bashang long-tailed roosters.
