不同灭菌方式对破壁灵芝孢子粉品质的影响OA
Effects of Sterilization Methods on the Quality of Wall-Broken Ganoderma lucidum Spore Powder
为探究不同灭菌方式对破壁灵芝孢子粉品质的影响,本研究通过电子束辐照灭菌、钴60辐照灭菌、湿热灭菌3种灭菌方式处理破壁灵芝孢子粉,分析不同灭菌方式下破壁孢子粉的性状和品质.结果表明,在色泽、气味、粘壁性等感官表现中,湿热灭菌表现较好,电子束辐照灭菌与钴60辐照灭菌较未灭菌表现无较大差异;显色反应结果表明,湿热灭菌的效果较差;显微鉴别结果显示,3种灭菌均出现粉体黏连,其中湿热灭菌黏连情况较严重.功能性成分测定结果表明,与未灭菌相比,电子束辐照灭菌和钴60辐照灭菌分别使多糖含量降低6.3%和7.0%,湿热灭菌处理后的多糖含量增加4.3%;电子束辐照灭菌、钴60辐照灭菌、湿热灭菌分别使总三萜含量下降3.9%、4.0%、10.5%;电子束辐照灭菌、钴60辐照灭菌使破壁灵芝孢子粉过氧化值分别增加100%、667.9%.抗炎试验证明,与未灭菌相比,破壁灵芝孢子粉水提物对脂多糖(LPS)诱导RAW 264.7细胞产生NO有较为显著的抑制活性,3种灭菌处理均使细胞抗炎活性降低且湿热灭菌处理的抗炎活性低于辐照灭菌处理.本研究为破壁灵芝孢子粉灭菌方式选择与应用提供了参考.
In order to study the effects of different sterilization methods on the quality of wall-broken Ganoderma lucidum spore powder,the properties and quality of wall-broken Ganoderma lucidum spore powder were evaluated after sterilization with three methods.The results showed that the performance of damp heat sterilization was the best among three methods according to the sensory quality of color,odor and viscosity,and there was no significant difference between electron beam irradiation sterilization or 60Co γ-irradiation sterilization and non-sterilization.The damp heat sterilization effect on color development reaction is poor;microscopic identification showed that powder adhesion appeared in all three types of sterilization,and the adhesion after damp heat sterilization was the most severe.In the determination of functional components,compared to non-sterilization,electron beam sterilization and irradiation sterilization reduced the polysaccharide content by 6.3%and 7.0%,respectively,while the polysaccharide content was increased by 4.3%after moist heat sterilization.Electron beam irradiation sterilization,60Co γ-irradiation sterilization,and moist heat sterilization decreased the total triterpenoids by 3.9%,4.0%,and 10.5%,respectively.Electron beam irradiation and 60Co γ-irradiation increased the peroxide value of wall-broken Ganoderma lucidum spore powder,by 100%and 667.9%,respectively,and there was no obvious effect on the peroxide value with the moist heat sterilization.The anti-inflammatory test showed that the aqueous extract of wall-broken Ganoderma lucidum spore powder had significant inhibitory activity on the production of NO induced by LPS in RAW 264.7 cells,and the anti-inflammatory activity of the cells was reduced by all three sterilization treatments,and the anti-inflammatory activity of the moist heat sterilization treatment was lower than that of the irradiation sterilization.This study provides a reference for the selection of the sterilization method for wall-broken Ganoderma lucidum spore powder.
